Lemon Chicken Orzo Soup

Ingredients
  

  • 1 ½ lbs chicken breast
  • 4 stalks celery
  • 4 carrots
  • ½ onion
  • 1 tbsp avocado oil
  • 1 tbsp ghee
  • 2 tbsp garlic, minced
  • 4 cups chicken (bone) broth (I use Bonafide Provisions bone broth)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp thyme
  • 1 tbsp rosemary
  • 1 tsp parsley
  • ½ tsp talian seasoning
  • ½ lemon, juiced (can add more if preferred)
  • 1 tsp salt
  • ½ tsp pepper
  • 1 box cassava orzo (I use Jovial Foods)

Instructions
 

  • Chop and sauté carrots, celery, onion and garlic in ghee on the stove until fragrant, then add to a slow cooker or pot on the stove along with the broth, seasonings, oil and chicken.
  • Stove Option - Allow the soup to simmer until the chicken is cooked completely.
  • Slow Cooker Option - Cook on high for three hours or low for six or until the chicken is completely cooked.
  • While the soup simmers and the chicken cooks, prepare orzo according to instructions.
  • Once the chicken is cooked, remove and shred, then add back to the soup.
  • Add in the orzo and lemon then mix to combine.
  • Top with additional herbs if desired and serve warm!

Notes

When enjoying leftovers, feel free to add additional broth as the orzo may absorb some of the liquid.
