Slice potatoes into fries while leaving the skin on. The skin is high in fiber and super good for you!
Soak fries in cold water for 30 minutes to remove potato starch and get your fries crispy in result.
Preheat oven to 375° and get a parchment lined baking sheet ready.
Once soaked, drain and dry your fries then move to a dry bowl.
Top with avocado oil and seasonings.
Line the fries in a single layer on the sheet being sure none are overlapping.
Cook for 20-25 minutes, then remove from oven and flip.
Raise the oven temp to 425° and return the fries to the oven for 20 more minutes.
If you want your fries even crispier after that, feel free to broil them for a few minutes, but be sure to keep an eye on them! I typically do mine for 3 minutes.
