Loaded Chili Ranch Sweet Potato Fries

Ingredients
  

Chili

  • ½ lb ground beef
  • 1 cup tomatoes, diced (canned)
  • 2 tbsp ketchup/tomato paste
  • ¼ tsp cumin
  • ¼ tsp paprika
  • ¼ tsp chili powder
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ white/yellow onion, diced
  • ¼ 1/4 cup broth
  • 2 tsp avocado oil

Sweet Potato Fries

  • 2 large sweet potatoes
  • 1 tbsp avocado oil
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper

Toppings

  • homemade ranch
  • green onions
  • cilantro
  • lime
  • bacon

Instructions
 

Chili

  • Sauté onions in avocado oil in the bottom of a medium pot. 
  • Once fragrant, add ground meat and break up with a spoon as it cooks. Cook until completely browned.
  • Add in all other ingredients and let simmer over medium/low heat for 20 minutes, stirring every few minutes. This will let the chili thicken!

Fries

  • Slice potatoes into fries while leaving the skin on. The skin is high in fiber and super good for you!
  • Soak fries in cold water for 30 minutes to remove potato starch and get your fries crispy in result.
  • Preheat oven to 375° and get a parchment lined baking sheet ready.
  • Once soaked, drain and dry your fries then move to a dry bowl.
  • Top with avocado oil and seasonings.
  • Line the fries in a single layer on the sheet being sure none are overlapping.
  • Cook for 20-25 minutes, then remove from oven and flip.
  • Raise the oven temp to 425° and return the fries to the oven for 20 more minutes.
  • If you want your fries even crispier after that, feel free to broil them for a few minutes, but be sure to keep an eye on them! I typically do mine for 3 minutes.
