Whole30 Potato Waffle Buns
These waffle buns are not only fun to make, but they’re a great way to stick to your Whole30 or even just your healthy eating goals when you’re craving your favorite burger. These make you feel like you’re grabbing dinner at a trendy burger joint, but instead it’s made up of all natural ingredients that you can feel good about!
Make it your own
You can use whatever type of potato you like for this! I’m not sure why, but I often have the best luck with orange sweet potatoes when making the waffle, but with a little patience, any of them will work!
Want something a little quicker or maybe low carb is your thing? Skip the potato waffle step and opt for a lettuce bun/wrap instead! It still has all of the amazing flavors you crave to get your burger fix.
SERIOUS SWAPPING
I’m all about recreating healthy versions of my favorite recipes, and that involves finding cleaned up alternatives to swap with the not as nutritious versions, so to make things easy on you, here are some of my go-to brands that I keep stocked.
- Primal Kitchen (linked here) and Chosen Foods (linked here) both have amazing avocado mayo. It’s one of my very favorite pantry staples, especially while I’m doing Whole30! It comes in multiple flavors and is great for recreating sides and sauces. Like my Special Sauce, for example, that I use with everything. I originally made it for this Whole30 Burger recipe, but I also love it as a dip, like with my Brussels Sprout Chips!
- The New Primal has a great sugar free ketchup that is compliant for Whole30 and paleo diets alike.
- Applegate, Nature’s Rancher and Pederson’s Farms have Whole30 and paleo compliant bacon that is great to add onto your burger. I also love the sugar free bacon from Aldi, and it’s a great price too!
- For good for you pickles and relish, I love Bubbies.

Whole30 Potato Waffle Buns
Equipment
- Mini Waffle Iron
Ingredients
- ½ medium potato, grated (can use regular or sweet)
- 2 eggs
- 2 tsp garlic powder
- 2 tsp onion powder
- avocado oil (the spray option is easiest here)
- salt and pepper, to taste
Instructions
- Grate half of a sweet or regular potato over a large bowl.
- Whisk eggs in a separate bowl and add to the shredded potato along with seasonings and mix together.
- Heat your waffle iron (I use a mini one from the brand Dash) and add a generous amount of avocado oil. Spray works best here! Let the iron heat up.
- Add a good amount of sweet potato to the iron and cook. The times I used more to make a thicker waffle were they times that it worked better for me. Don’t press down too hard on the iron to avoid sticking!
- Check on the waffle every few minutes until formed into a waffle shape and carefully remove when ready. I use two forks to gently remove the waffle. It will be hot!

Made these with burgers for dinner and for breakfast with eggs and wow! So perfect! Popped leftovers in the air fryer to make them a little bit crispy for breakfast too. In every way they are delicious!!

This recipe is AWESOME! I’ve always struggled to find the right “bun” with sweet potato and this here is it! Love that you can use it for breakfast sandwiches, burgers or we used it with turkey and pesto – DELISH! Highly recommend adding this one into your rotation. If you don’t have the waffle press it is under $10 on Amazon and worth it!!

I have not made these yet but they look amazing. Would they work well making ahead and freezing? I don’t have an air fryer – would a toaster or just the oven to reheat work to crisp them up?

I’m not sure as I haven’t tried freezing them! My only worry is the potential moisture, but it could possibly work! Yes, a toaster oven or oven should be just find to crisp them up! Air fryer or toaster will likely be better for crisping vs. an oven, I would say!

I had the Dash mini waffle maker on my bday wish list just so I could make this recipe. Made this using sweet potato. I had a bit of a hard time because my single large sweet potato was 1.41 lb so I had to keep adding more grated sweet potato to the egg mixture. In the end I think I used about the equivalent to about 1.5 cups grated sweet potato. I also reduced the garlic powder and onion powder to 1 tsp each. They were so delicious on the chicken burger. I also made the special sauce which totally finished the burger. Such a great recipe!

Looks wonderful! I want to try these but I’m wondering when you put the mixture into the waffle iron do you just put a little pile in the middle of the waffle iron and squash it down with the top, or spread it out over the whole surface then put the top down? I’m using a little Dash waffle iron, perfect size for making a “waffle bun.”

I use the same iron! Spread it out slightly and press the top down.
