This Whole30 Burger with Potato Waffle Buns and Special Sauce will be your new favorite burger, but with all natural ingredients.
Whole30 Burger
This Waffle Bun Burger makes you feel like you’re grabbing dinner at a trendy burger joint, like In-N-Out or Shake Shack, but instead it is made up of all natural ingredients that you can feel good about!
Serious Swapping
I’m all about recreating healthy versions of my favorite recipes, and that involves finding cleaned up alternatives to swap with the not as nutritious versions, so to make things easy on you, here are some of my go-to brands that I keep stocked.
- Primal Kitchen (linked here) and Chosen Foods (linked here) both have amazing avocado mayo. It’s one of my very favorite pantry staples, especially while I’m doing Whole30! It comes in multiple flavors and is great for recreating sides and sauces. Like my Special Sauce, for example, that I use with everything. I originally made it for this Whole30 Burger recipe, but I also love it as a dip, like with my Brussels Sprout Chips!
- The New Primal has a great sugar free ketchup that is compliant for Whole30 and paleo diets alike.
- Applegate, Nature’s Rancher and Pederson’s Farms have Whole30 and paleo compliant bacon that is great to add onto your burger. I also love the sugar free bacon from Aldi, and it’s a great price too!
- For good for you pickles and relish, I love Bubbies.
Topping Talk
What do you top your burgers with? Here are a few of my go-tos:
- Romaine or Butter Lettuce (Gotham Greens)
- Bacon (Applegate or Nature’s Rancher)
- Pickles (Grillo’s or Bubbies)
- Red or White Onion
- Special Sauce (included in the recipe below!)
Make it your own
You can use whatever type of potato you like for this! I’m not sure why, but I often have the best luck with orange sweet potatoes when making the waffle, but with a little patience, any of them will work!
Want something a little quicker or maybe low carb is your thing? Skip the potato waffle step and opt for a lettuce bun/wrap instead! It still has all of the amazing flavors you crave to get your burger fix.

Whole30 Burgers with Potato Waffle Buns
Equipment
- Mini Waffle Iron
Ingredients
Burgers
- 1 lb ground beef
- ¼ tsp onion powder
- ¼-½ tsp garlic powder
- ¼ tsp salt
- ¼ tsp black pepper
- 1 tbsp avocado oil or olive oil, for cooking
Waffle Buns
- ½ medium potato, grated (can use regular or sweet)
- 2 eggs
- 2 tsp garlic powder
- 2 tsp onion powder
- avocado oil (the spray option is easiest here)
- salt and pepper, to taste
Special Sauce
- 2 tbsp compliant mayo (I use avocado mayo)
- 1 tbsp compliant ketchup
- 1 tsp rice vinegar (sub apple cider vinegar for paleo compliant)
- 2 tsp compliant relish (I use Bubbie's)
Instructions
Potato Waffles
- Grate half of a sweet or regular potato over a large bowl.
- Whisk eggs in a separate bowl and add to the shredded potato along with seasonings and mix together.
- Heat your waffle iron (I use a mini one from the brand Dash) and add a generous amount of avocado oil. Spray works best here! Let the iron heat up.
- Add a good amount of sweet potato to the iron and cook. The times I used more to make a thicker waffle were they times that it worked better for me. Don’t press down too hard on the iron to avoid sticking!
- Check on the waffle every few minutes until formed into a waffle shape and carefully remove when ready. I use two forks to gently remove the waffle. It will be hot!
Burgers
- Add all burger ingredients aside from the oil into a bowl and mix until combined evenly.
- Add oil to a skillet on the stove and cook on both sides until it's cooked as you like it best.
- Prep toppings and mix together sauce ingredients.
- Add your sandwich fixings to the waffle buns and enjoy!

YOU GUYS THE BUN!! The first time trying this, I was nearing day 25 of a round of w30. Debating whether to throw in the towel and here Kayla comes with this dang bun on the whole30 IG takeover. I immediately ordered the cute waffle iron & made a breakfast sandwich. Good Lord was it amazing. So I made another one for a burger a few days later!
The burger sauce is drool worthy- so so good. I use on burgers with buns and burger salads!

Ah, this makes me so happy! Keeping my meals fun/exciting/delicious gets me to make it through my Whole30 rounds each time, and I’m so excited that this recipe did that for you!! So glad you ‘ve found multiple ways to enjoy this recipe and I appreciate your rating/review so much! Thank you, Izzy! 🙂

After trying lots of “bread” options for sandwiches, like cloud bread and almond flour varieties, I concluded lettuce was my only real option…. Then I tried this. This is the best-tasting and easiest bun option I’ve found in years for a paleo/whole 30 diet! Just a couple ingredients (that I ALWAYS have on hand), not much hands-on time, and you’ve got a legitimately tasty, great-textured, sweet & savory bun! It holds up to the burger well, unlike other grain-free breads too. I’ve used it for burgers, breakfast, turkey sandwiches, and it’s even pliable enough for hot dogs! Thanks Kayla! 🍔 🌭 🥚 🥪

I am so beyond thrilled to read this, Jasmine! I’ve had the same experiences with bread and sometimes we just need more than a lettuce “bun” you know? Thank you so much for this kind and thoughtful review! I’m so happy that you love this recipe as much as I do. 🙂
Shelley
Hi, Kayla ~ I want to make the “bun”, but I don’t see where you address the second half of the potato. This sounds great, though – I’m excited to find your blog!
kaylaskitchandfix
Hi, Shelley! You just use half of the sweet potato! You can save the other half to use as you please or use the full thing to double the recipe! I hope you enjoy. 🙂

Can the waffle buns be made and frozen for later use? I work two jobs so I’m often lacking either time or energy (sometimes both) for making meals, so I’m trying to find things I can make up at once and have on hand that would just require a reheat. These seem like they would be great for several different uses. If they are able to be frozen, how would you recommend they be reheated? Thank you for the help!
kaylaskitchandfix
Hm, I haven’t tried freezing them. If you do try it, I would recommend reheating them in the oven, conventional toaster or air fryer to get them crispy as a microwave would just leave them turning soggy!
