This Vegan & Paleo Veggie-Powered Soup is packed with vitamins and nutrients that come together in a creamy, flavorful soup. It’s easy, it’s delicious and it takes less than 30 minutes from start to finish. Plus, it’s all made in one pot. It doesn’t get much better than that!

Vegan & Paleo Veggie-Powered Soup
This delicious yet nourishing soup is my go-to recipe when I want to fit extra veggies into my routine without feeling like I’m chocking them down. I know you know the feeling. While this soup is extremely good for you, it is far from one of those boring and tasteless “detox” soups I have seen far too many of. This creamy soup is full of flavor that I know you’re going to love.
Not only is it healthy and tasty, but it’s super easy too. You basically lightly prep your veggies (no need for perfection here as they’ll be blended together once they’re cooked), toss them into your pot with the other ingredients and blend everything together. We all need some of those simple yet good for you recipes to have on repeat, and this is one of them for me!

Vegan & Paleo Veggie-Powered Soup
Equipment
- Blender or Immersion Blender
Ingredients
- ½ onion, white
- 2 garlic cloves
- 2 tbsp extra virgin olive oil or avocado oil
- 4 cups veggie broth (Check for compliant ingredients)
- 2 cups broccoli florets, overflowing
- 1 zucchini
- 1 16 oz bag frozen peas
- 1 cup fresh spinach, packed
- ½ cup nutritional yeast (Check for compliant ingredients)
- salt & pepper, to taste
- 1 cup full fat coconut milk (Check for compliant ingredients)
Instructions
- Sauté sliced onion & garlic cloves in olive oil or avocado oil in a pot over medium heat until fragrant.
- Add broccoli florets, zucchini rounds and veggie broth to the pot. Simmer covered until the broccoli is soft, which should be about 10-15 minutes.
- Add in spinach, peas, salt, pepper and nutritional yeast. Stir then simmer for 2-3 minutes.
- Add all of thecontents to a blender (you may need to do this in two batches) and blend until smooth. You can also leave everything in the pot and blend with an immersion blender.
- Add the soup back to the pot and stir in the coconut milk.
- Top with a drizzle of coconut milk, salt, pepper and fresh herbs, if you’d like.
