Vegan Chickpea Cookie Dough
While it’s not full of flour and sugar, this Vegan Chickpea Cookie Dough will definitely fill your craving for traditional cookie dough. It’s light, creamy and made with all clean ingredients, so you can feel good about digging in without the sugar crash after indulging!
Make it your own!
While this recipe has plant based protein from the chickpeas already, you can easily add in any of your favorite super foods to make this treat even more nutritious! When I make it, I love to add in a few scoops of my favorite collagen or protein powder and sometimes throw in some chia seeds and hemp seeds for additional health benefits!

It’s easy too
All you do is throw your ingredients into a food processor and blend them together. Super simple! I like to enjoy it with pretzels as a dip but most often, I just dig in with a spoon.

Vegan Chickpea Cookie Dough
Equipment
- Food Processor
Ingredients
Chickpea Cookie Dough
- 1 15.5 oz can garbanzo beans/chickpeas
- ½ cup unsweetened runny nut butter (I use peanut butter)
- 2 tbsp pure maple syrup
- 1 tsp vanilla extract
- 2 tbsp vanilla almond milk (I use MALK Organics)
- ¼ tsp salt
- ¼ cup chocolate chips (I use Enjoy Life or Lily's for dairy free or low sugar)
Optional Add Ins
- 2 scoops collagen or protein powder (I use Further Food collagen)
- 1 tsp chia seeds
- 2 tsp hemp seeds
Instructions
- Rinse and drain beans. Add them to a food processor with the almond milk. Blend the chickpeas and milk until smooth.
- Add in the remaining ingredients aside from the chocolate chips and optional add ins and blend again until smooth.
- Stir in the chocolate chips and any optional add ins, then enjoy!
