Taco Loaded Potato “Nachos”
These “nachos” are essentially homemade potato chips (which might I add, may be better than the traditional tortilla chip) topped with all of your favorite taco fixings. They are balanced in nutrition making them an ideal meal as well as the snack or appetizer they’re typically thought to be.

Loaded Taco Potato “Nachos”
Ingredients
Potatoes
- 3 small-medium potatoes
- ~1 tbsp olive oil or avocado oil
- salt & pepper, to taste
Taco Meat:
- 1 lb ground meat (beef, chicken or turkey)
- 1 tbsp olive oil or avocado oil
- 1 tbsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- ¼ tsp dried oregano
- ½ tsp paprika
- 1 ½ tsp cumin
- 1 tsp salt
- ⅓ cup cup water
Toppings (customize to your liking)
- canned coconut cream
- red onion, diced
- avocado
- fresh cilantro
- shredded lettuce
- cherry tomatoes
- salsa
- lime wedge
- salt & pepper
Instructions
Potatoes
- Preheat your oven to 400° and line two baking sheets with parchment paper.
- Slice potatoes using a mandoline.
- SPACE out potato slices and brush or spray with oil. Top with salt and pepper.
- Bake for 30-45 min until as crispy as desired. Depending on the oven, the outside slices may crisp faster, so feel free to remove those and keep the middle ones baking.
Taco Meat
- Heat oil in a skillet on the stove over medium/low heat.
- Once hot, add your ground meat to the skillet.
- Break the meat apart as it cooks, then mix in the seasonings and water once browned.
Loaded Taco Potato “Nachos”
- Aseemble crispy potato slices, then top with taco meat and all of your desired toppings.
