Sweet Potato Breakfast Hash
Combine all of your favorite breakfast/brunch sides into one filling dish tied together with a creamy ranch sauce (here!). It’s a little spicy from the spices and a little sweet from the sweet potatoes and overall makes for a great flavor combination.
This hash is great in being adjustable to fit multiple dietary needs! It’s gluten free and dairy free naturally, but can definitely be adjusted to be vegetarian. If you this to take the more plant based approach, simply leave out the bacon!
Sick of Eggs?
Swap them! I need a break from eggs for breakfast every so often, and when that happens, I make this simple adjustment. Simply cook sausage (be sure it’s Whole30 compliant if necessary) and add it to this dish for a different way to get in your protein. You’ll want to cook your sausage first to be sure it’s cooked through, then set aside while you cook your produce. It’s a simple way to get your protein from a different source!
Still want your eggs? Leave them in! You can totally have both the sausage and the egg if you would love to! The more protein, the merrier.
Not only can you change up how you cook your eggs (if you’re including them), but this recipe is great for adding in your favorite veggies.
Sweet Potato Breakfast Hash
Ingredients
- 2 organic eggs
- 1 organic sweet potato, cubed
- 2 strips cooked sugar free bacon (I use Nature's Rancher or Applegate)
- 1/2 tsp paprika
- 1/8 tsp cayenne
- 1/4 tsp cumin
- 1 handful organic spinach
- 1/8 organic red onion, chopped
- garlic salt, to taste
- pepper, to taste
- green onions, sliced, to taste
- 2 tbsp avocado oil or olive oil
- 1 tbsp ghee
Instructions
- Sauté cubed sweet potato in 1 tbsp avocado oil and ghee and add spices once slightly softened.
- Add in red onions and spinach and cook until potatoes are fork tender.
- Cook eggs in additional tbsp of avocado oil and make to your liking.
- While the eggs are cooking, assemble hash onto a plate and crumble already cooked bacon over top.
- Mix together your sauce and drizzle over the hash.
- Add your egg to your plate and top with a generous amount of green onions.
