This Strawberry Salad with Sticky Date Granola sits on top of a spinach base and is then topped with fresh berries, honey goat cheese, red onion slices and homemade sticky date granola then is finished off with a drizzle of strawberry dressing. It has so many delicious spring flavors and can of course be tailored to your taste preferences and dietary needs!

Strawberry Fields Salad with Sticky Date Granola
What you’ll need:
- Dressing:
- Canned Coconut Cream (sub heavy cream as needed)
- Extra Virgin Olive Oil
- Lemon
- Apple Cider Vinegar
- Honey (sub maple syrup for vegan)
- Strawberries
- Dijon Mustard
- Salt
- Salad Fixings:
- Spinach
- Chicken (omit if vegetarian/vegan)
- Strawberries
- Blueberries
- Honey Goat Cheese
- Red Onion
- Sticky Date Granola (dates, water, vanilla extract, cashews, almonds, pumpkin seeds, pecans, shredded coconut, salt, chia seeds, flaxseeds, coconut oil, maple syrup, cinnamon)
- Grilled Chicken (optional):
- Lemon
- Extra Virgin Olive Oil
- Garlic
- Onion Powder
- Herbs de Provence
- Chicken Breast

Sticky Date Granola
Equipment
- Blender or Food Processor
Ingredients
- 1 cup pitted dates (about 8)
- ½ cup hot water (do not heat in the microwave to avoid burns!)
- 1 tbsp vanilla extract
- 1 cup cashews
- 1 cup almonds (I prefer slivered)
- 1 cup pumpkin seeds
- 1 cup pecans
- 1 cup shredded unsweetened coconut
- 2 tbsp chia seeds
- 2 tbsp flaxseeds
- ¼ cup coconut oil, melted
- 2 tbsp maple syrup (optional, for sweetness)
- 2 tbsp cinnamon
- ½ tsp salt
Instructions
- Preheat your oven to 300℉ and line a large baking sheet with parchment paper.
- Combine the hot water with the pitted dates in a food processor or blender and blend until fully combined and a date paste has formed.
- Combine all of the remaining ingredients along with the date paste in a large bowl and mix everything together.
- Spread out the granola mixture as thin as you can on the parchment lined baking sheet, then bake for 40 minutes, checking the granola at 30 minutes to ensure it doesn't burn.
- Take the granola out of the oven once ready and allow to cool fully before breaking it up. Note that because of the dates, this will make the granola a little softer than a crunchy granola, which ends up being super delicious!
- Store in a large container with a lid. I love to eat this with almond milk (and sometimes chocolate chips!), on top of yogurt with berries and honey or on top of spring salads! Enjoy!

- ¼ cup canned coconut cream (can sub heavy cream as needed)
- ¼ cup extra virgin olive oil
- 1 lemon, zested and juiced
- 1 tbsp apple cider vinegar
- 2 tbsp honey (sub maple syrup for vegan)
- ½ cup strawberries
- 1 tsp Dijon mustard
- ¼ tsp salt
Salad Fixings (adjust amounts to your liking)

- dressing, recipe included here
- spinach
- strawberries
- blueberries
- honey goat cheese
- red onion
- chicken, recipe included here (omit if vegetarian/vegan)
Grilled Chicken
- 1 lemon, zested and juiced
- ¼ cup olive oil
- 4 cloves garlic, minced
- 1 tbsp onion powder
- 1 tbsp herbs de Provence
- 2 lbs chicken breast
Instructions
Grilled Chicken (Optional)
- If including, combine all of the marinade ingredients and mix together. Then, cover each piece of chicken in the marinade. If you'd like, allow the chicken to marinate covered in the fridge overnight, but at least for 30 minutes.
- Once ready to cook, I like to grill mine on a cast iron grill pan until the internal temperature is 165℉.

Strawberry Dressing
- Combine all ingredients in a blender and blend until fully combined.
Strawberry Salad with Sticky Date Granola
- The great thing about this recipe is it is super easy to customize. Use desired amounts of salad fixings and also feel free to alter them as needed. My only note is to assemble right before eating! Also, if you plan to meal prep this salad, store the different salad fixings separately then combine before enjoying.
