Sparkling Cucumber Basil Mocktail
This drink recipe is made from just real ingredients and is so refreshing and light. It packs delicious natural flavors with the perfect amount of kick from fresh ginger root. It’s going to be on repeat weekly in my household!
What you’ll need:
- cucumber
- ginger root
- basil leaves
- lemon juice
- water
- simple syrup, optional (click here for my homemade sugar free recipe)
- sparking water

Sparkling Cucumber Basil Mocktail
Equipment
- Blender
- Mesh Strainer
Ingredients
- ½ cup cucumber, chopped
- ¼ tsp ginger root
- 3 basil leaves
- ¼ cup fresh lemon juice
- ¼ cup water
- 1 tbsp simple syrup, optional (sugar free recipe is in this blog post!)
- sparking water, to top
Instructions
- Add the chopped cucumber, ginger, basil, lemon juice, water, and simple syrup (if desired) to a blender and blend until smooth.
- Strain the blender contents through a mesh strainer evenly into two glasses with ice.
- Top each drink with the sparkling water.
- Garnish with cucumber slices, lemon slices, and basil as desired. Cheers!
Sugar Free Simple Syrup
Ingredients
- equal parts water
- equal parts sugar free sugar replacement (I use Lakanto, can sub real sugar as well)
Instructions
- Combine water and "sugar" in a pot on the stove over medium heat. I typically use anywhere from ¼ cup of each (for a few drinks) to 1 cup+ each (for more drinks). It depends on how much you'll need!
- Bring to a slight simmer and keep an eye on the mixture, mixing lightly as it dissolves.
- Once it is clear and completely dissolved, your simple syrup is done!
- Pour the syrup into a resealable glass container and let cool before using it for your drinks.
