This high protein Pickle Ranch Buffalo Chicken Pizza is insanely delicious and made with just simple, high quality ingredients. The crust is made from gluten free flour and greek yogurt making the crust a great source of protein. Opt to top the crust with homemade pickle ranch, high quality mozzarella and saucy buffalo chicken for a healthy and balanced meal!
Pickle Ranch Buffalo Chicken Pizza
What you’ll need:
Crust:
- 1:1 Gluten Free Flour (or all purpose)
- Greek Yogurt
- Onion Powder
- Garlic Powder
- Baking Powder
- Salt

- Pickle Juice

A NOTE ON SUBSTITUTIONS
Baking can be tricky, especially when using gluten free ingredients. Please note that this recipe has not tested alternative flours outside of the Bob’s Red Mill Gluten Free 1:1 Flour as it’s one of my favorites to bake with. Please keep that in mind before changing up any ingredients in this recipe!

Pickle Ranch Buffalo Chicken Pizza
Equipment
- Cast Iron Skillet
Ingredients
Pizza Dough
- 1 cup 1:1 gluten free flour (I use Bob's Red Mill)
- 1 cup Greek yogurt (I use organic grass fed)
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 tsp baking powder (I use Otto's)
- pinch salt
- avocado oil
Pickle Ranch Sauce
- ¼ cup avocado oil mayo (I use my homemade recipe, linked in this blog post!)
- ½ tbsp pickle juice
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried chives
- 1 tsp dried dill
- 1 tsp dried cilantro
- pinch salt
Toppings (measure with your heart!)
- cooked and diced chicken tossed in buffalo sauce
- red onion, diced
- pickles, diced
Instructions
- If using chicken, cook it and either dice or shred it then coat in buffalo sauce.
- Preheat your oven to 400℉ and drizzle avocado oil into a cast iron skillet. Spread the oil to cover the skillet completely.
- Combine the flour, Greek yogurt, onion powder, garlic powder, baking powder and salt in a bowl and using your hands, knead until fully combined and a ball of dough has formed.
- Spread out the dough onto your greased cast iron skillet ensuring it is evenly spread out. This will be a thin crust pizza, by the way! To keep the dough from sticking to your hands, drizzle a little avocado oil into your palms and rub it in.
- Drizzle a small amount of avocado oil over the top of the dough and spread it out evenly, then bake the crust for 10 minutes.
- While it cooks, prepare your pickle sauce and dice your onion and pickles.
- Remove the crust from the oven, spread out the sauce evenly on top, sprinkle on cheese then garnish with buffalo chicken and diced red onion and pickles. Be sure not to load the toppings on too heavy or the crust may take longer to bake! Bake the pizza again for 15-20 minutes.
- Remove the pizza from the skillet, slice and enjoy!
