Dress up a boxed cake mix with my easy Peanut Butter Buttercream Icing! It’s rich and smooth all while being made with as simple of ingredients as possible. It can be made to fit multiple dietary needs while being delicious enough to serve to anyone! As someone that loves chocolate and peanut butter pairing the most, you can trust me!
Peanut Butter Buttercream Icing
What you’ll need:
- Butter
- Peanut Butter
- Salt
- Powdered Sugar
- Creamer
- Vanilla Extract

Dress up your Boxed Chocolate Cake Mix
Since I’m not the most skilled baker… yet (baking with allergies and dietary restrictions is hard okay?!)… I have started “dressing up” boxed cake mixes. It’s been so fun and is helping me learn to make buttercream, think of flavor pairings and more.
As a chocolate peanut butter lover, here is how I dressed up this chocolate cake:
- I poured 1 tbsp of chilled espresso onto each cake round. Coffee and espresso helps to make chocolate more vibrant and rich, plus this method helps the cake stay moist, as a lot of gluten free cakes get dry the longer they sit out.
- I made my own homemade peanut butter buttercream! The recipe can be found at the bottom of this post. Let’s be honest, it elevates a cake so much more than using canned frosting!
- In between the cake layers, I added chopped peanut butter cups and mini chocolate chips. Necessary? Well, no. But also, kind of yes.

Peanut Butter Buttercream Icing
Equipment
- Hand Mixer
Ingredients
- ½ cup room temperature butter (I use vegan butter)
- ½ cup peanut butter
- pinch salt
- 2 cups powdered sugar
- ¼ cup cream (I use nutpods)
- 2 tsp vanilla extract
Instructions
- Whip room temperature butter on medium speed until creamy and smooth. Then, add in the peanut butter and whip until fully combined.
- Add the salt and powdered sugar, one cup at a time, thoroughly mixing in the powdered sugar with each addition.
- Pour in the cream 1 tbsp at a time and whip for 20-30 seconds each time. Add the vanilla extract and mix on medium-high until fully mixed and thick.

Explain to me how this is sugar free when it has 2 cups of powdered sugar😂 it seems like a good recipe but it’s kinda messed up to mislead ppl to get more clicks on your blog

I would never do that! You must not have read the blog post where it shares that it can be made sugar free by substituting the powdered sugar for monk fruit powdered sugar. The reason I add lots of dietary notes is because we all have different needs and preferences so I always add as many options as I can and as many as I can test myself. Hope that helps!
