This Paleo Mixed Berry Lemon Poppyseed Salad is my favorite lunch and dinner every summer. It is made with all real ingredients and is easy to customize to meet your dietary needs. It’s something that everyone will love the taste of and is super nourishing in the process!
Paleo Mixed Berry Lemon Poppyseed Salad
This salad is not only my favorite because it’s delicious and bursting with warm weather flavor, but also because it is so easy! It takes super minimal effort and is perfect for meal prepping for the week ahead or for serving a group.

This delicious and nutritious salad is made with real ingredients and fits seamlessly into the following dietary needs when using the products/brands (or ones that are similar) listed in the recipe:

Mixed Berry Lemon Poppyseed Salad
Equipment
- Food Processor
Ingredients
Poppyseed Dressing
- ¼ cup canned coconut cream (can use chilled canned coconut milk)
- ¼ cup extra virgin olive oil
- 1 lemon, zested and juiced
- 1 tbsp apple cider vinegar
- 2 tbsp pure maple syrup
(can sub honey if not vegan or homemade date paste for Whole30)
- 1 tsp Dijon mustard
- ½ tbsp poppyseeds
- ¼ tsp salt
Salad fixings
- spinach
- chicken (omit if vegetarian/vegan)
- strawberries
- blueberries
- bacon (sugar free if Whole30 or paleo, omit if vegetarian/vegan)
- red onion
- walnuts
- poppyseed dressing
Instructions
Lemon Poppyseed Dressing
- Combine all ingredients aside from poppyseeds into a food processor. Blend until smooth.
- Stir in poppyseeds and set aside.
Mixed Berry Lemon Poppyseed Dressing
- Add all of the salad ingredients of choice to your favorite plate or bowl and drizzle the Lemon Poppyseed Dressing on top. Enjoy!
