This No Mayo Smashed Chickpea Salad is made using just a handful of simple, real food pantry staples and is done in less than 10 minutes. It makes for a great filling for sandwiches and lettuce wraps and it is also delicious eaten with chips or even alone with a fork!

No Mayo Smashed Chickpea Salad

While I love mayo, I know it is not for everyone. Because of this, I created this chickpea salad without any mayo! And guess what? I don’t miss the mayo at all! This chickpea salad is super creamy and flavorful. It’s also perfect for customizing. If you want additional spices or herbs in there, feel free to add them in. You also can build a sandwich using your favorite things or simply throw a spoonful of the salad into a lettuce boat. There are so many ways to enjoy this easy recipe!

Ingredients Method

Ingredients
  

  • 1 15 oz can chickpeas, rinsed and drained
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp tahini
  • ½ lemon, juice of
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp pepper
  • ⅓ cup celery, diced
  • ¼ cup red onion, diced

Method
 

  1. In a large bowl, combine chickpeas, olive oil, tahini, lemon juice and garlic powder and stir, then smash lightly with a fork until you reach your desired consistency.
  2. Add in salt and pepper, to taste, as well as diced celery and diced red onion. Mix together.
  3. Serve in a sandwich or lettuce wrap with your favorite toppings (i.e. cucumber slices, vegan mayo, avocado, sprouts, greens, etc.)!

    I am not a cook, but was not intimidated by this recipe, so tried it.
    Yowzers! This is delicious!!!
    I have a bad gluten sensitivity, and really enjoyed this, because I could indulge without worrying about after effects.

    Love this recipe, can it be meal prepped? And if so how long can it be stored? Also, how many sandwiches can one batch make? Thank you!

      For sure! I always like to use opened chickpeas within a week and the number of sandwiches depends on how much filling you like. 🙂
