No Mayo Potato Salad
This dish is easy to prepare yet tastes impressive with lots of fresh herbs and a light dressing. It is sure to compliment whatever you’re paring it with. I personally love to enjoy this No Mayo Potato Salad alongside my Cassava Flour Breaded Chicken (here!) or alongside a seared steak and roasted veggies. It’s made with less than 10 all natural and clean ingredients and is completely Whole30 friendly, too!

No Mayo Potato Salad
Ingredients
- 6 medium red organic potatoes
- ¼ cup olive oil
- ¼ cup dill
- ¼ cup chives
- 1 tbsp Dijon mustard
- 1 lemon
- 1 tbsp garlic
- 1 tbsp apple cider vinegar
- salt and pepper, to taste
Instructions
- Cut potatoes in half and cover with water in a pot over med/high heat until boiling. Let simmer until fork tender (15-20 minutes) then drain.
- Combine all ingredients or the dressing, aside from the dill and chives. Add potatoes, herbs and dressing and stir until the potatoes are evenly covered.
- Let sit for 10 minutes or so to allow the dressing to sink into the potatoes.
