August 12, 2020 by kaylaskitchandfix 2 Comments

Light and fresh yet filling and comforting, this No Mayo Potato Salad is the perfect addition to any meal or gathering. Whether you plan to spend an evening cooking at home for a date night or soak up the rest of the summer weather at a backyard picnic, be sure to add this side to the menu!

This dish is easy to prepare yet tastes impressive with lots of fresh herbs and a light dressing. It is sure to compliment whatever you’re paring it with. I personally love to enjoy this No Mayo Potato Salad alongside my Cassava Flour Breaded Chicken (here!) or alongside a seared steak and roasted veggies. It’s made with less than 10 all natural and clean ingredients and is completely Whole30 friendly, too!

Health Benefits

You may think you’re just enjoying a delicious side dish, however, there are plenty of health benefits that you may benefit from in eating this potato salad. Here are a few facts about the ingredients included in this No Mayo Potato Salad recipe:

Serving Tip

If you plan to serve for a group, I’d definitely recommend using fresh herbs, but if you plan to make and eat throughout the week, I’d opt for the dried versions!

Ingredients

  • 6 medium red organic potatoes
  • ¼ cup olive oil
  • ¼ cup dill
  • ¼ cup chives

  • 1 lemon
  • 1 tbsp garlic

Do you have a readily available Whole30 compliant Dijon that you recommend? Grey Poupon has white wine and sugar.

    Thanks!
