Lemon Chicken Orzo Soup

This Lemon Chicken Orzo Soup is the perfect recipe to cozy up with on a Sunday night. Plus, the leftovers are ideal to have for lunches throughout the week. It’s light, nourishing and comforting aka the coziness you need on a chilly fall day. Or whenever you’re craving it, because personally, I love soup all year round.

I love to nourish my body as often as possible, while never ever compromising the taste. It’s no secret that with cooler weather comes cold and flu season, and I like to do my best to prepare my body with mentioned nourishment all season long by making healthy and immune strengthening soups to warm up with.

An easy way to add powerful nutritional benefits to your soup is by making them with bone broth. You can make your own, which plenty of people do, but I typically don’t have time, so I opt for grabbing a bag of the highest quality bone broth on the market, Bonafide Provisions. This is not an ad (but even if it was, I only promote things I LOVE!), I just truly believe in the values of the brand. It’s one you can trust your health with. It aids in your total-body wellness, which includes immunity, joint health, hair, skin and nails and even brain function.

I also am always sure to make recipes that are realistic for fitting into my busy lifestyle, and there is nothing better to me than throwing together a healthy and easy soup. Not to mention, when it can be made in a slow cooker? I know it’ll be a recipe I can make weekly all through the colder months!

Make it your own!

Like wild rice better than orzo? Swap it! Are you a vegetarian and prefer tofu? Leave out the chicken and sub that in! Feeling run down and want a traditional chicken noodle soup? Use noodles instead (might I suggest Jovial Foods for amazing gluten free and grain free options)!

Ingredients Equipment Method Notes

Ingredients
  

  • 1 ½ lbs chicken breast
  • 4 stalks celery
  • 4 carrots
  • ½ onion
  • 1 tbsp avocado oil
  • 1 tbsp ghee
  • 2 tbsp garlic, minced
  • 4 cups chicken (bone) broth (I use Bonafide Provisions bone broth)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp thyme
  • 1 tbsp rosemary
  • 1 tsp parsley
  • ½ tsp talian seasoning
  • ½ lemon, juiced (can add more if preferred)
  • 1 tsp salt
  • ½ tsp pepper
  • 1 box cassava orzo (I use Jovial Foods)

Equipment

  • Slow Cooker

Method
 

  1. Chop and sauté carrots, celery, onion and garlic in ghee on the stove until fragrant, then add to a slow cooker or pot on the stove along with the broth, seasonings, oil and chicken.
  2. Stove Option – Allow the soup to simmer until the chicken is cooked completely.
  3. Slow Cooker Option – Cook on high for three hours or low for six or until the chicken is completely cooked.
  4. While the soup simmers and the chicken cooks, prepare orzo according to instructions.
  5. Once the chicken is cooked, remove and shred, then add back to the soup.
  6. Add in the orzo and lemon then mix to combine.
  7. Top with additional herbs if desired and serve warm!

Notes

When enjoying leftovers, feel free to add additional broth as the orzo may absorb some of the liquid.
