This healthy and comforting soup recipe is packed with roasted veggies, but you’ll only notice how creamy and flavorful it is. It’s perfect for dipping in a golden grilled cheese or just enjoying solo. The choice is yours!
From Sheet Pan to Blender
This Hidden Veggie Tomato Bisque is sure to be a new colder weather staple as it’s as easy as it is healthy. All you do is roast your veggies, heat up your liquids, then blend it all together. Couldn’t be more simple!
If you’d rather, you can also use an immersion blender for a more piece-y soup vs. a smoother base.

I’m sure to nourish my body as often as possible, especially during the colder months. It’s no secret that with cooler weather comes nasty viruses. Hidden Veggie Tomato Bisque
Equipment
- Blender
- Immersion Blender
Ingredients
- 1 zucchini
- 2 pints cherry tomatoes
- 12 oz cauliflower florets
- 1 bulb garlic
- 1 onion
- 2 tsp fresh thyme
- 1 tbsp fresh basil
- 3 tbsp olive oil
- salt and pepper, to taste
- 1 cup coconut milk
- 1 cup veggie or chicken broth
- 1 tsp paprika
- 1 tsp Italian seasoning
Instructions
- Preheat your oven to 450°.
- On a baking sheet, toss cherry tomatoes, sliced zucchini (your choice to remove the skin or not), cauliflower florets, a bulb of garlic, sliced onions, and chopped thyme and seasonings in olive oil or avocado oil. Sprinkle salt and pepper over the top and spread out evenly.
- Bake the veggies in the oven for 30 minutes.
- When you have five minutes left of bake time, combine the remaining ingredients on the stove in a pot over medium low heat and stir.
- Once the veggies are done, add them to the pot and combine. Next, either blend the soup contents in your blender or use an immersion blender.
- Blend until desired consistency, then serve warm!

This is by far the best tomato bisque that I have ever had. I rarely do tomato soup since it’s sometimes too much tomato, but this is not at all. The other veggies mix perfectly well with the tomatoes. The amount of garlic is JUST right.

This is incredibly delicious! It wasn’t difficult to make but did take a bit of time to prep the veggies. I made it during the day so I can heat it up at night for dinner. Fingers crossed that the kids like it!
