What is my favorite way to get in my greens, you ask? By eating them with pasta, obviously, and this Green Goddess Pasta Salad is the tastiest way to get the best of both.

Green Goddess Pasta Salad

This plant focused, gluten free Green Goddess Pasta Salad recipe requires basically no effort and can be easily adjusted to meet any dietary needs or preferences. It is naturally vegetarian and it can even be prepared vegan!

Not only is this pasta salad delicious, it is also a great way to use up all the veggies you have in your fridge while getting dinner on the table in 20 minutes. Easy, nourishing and tastes great? Count me in!

Yes! This Jovial Foods Farfelle pasta, and all of the brown rice pastas, are amazing in pasta salads. Hot or cold, this brand is my very favorite when it comes to gluten free, clean pasta. They also make cassava flour pasta which is the perfect substitution for anyone that eats grain free.

Ingredients Equipment Method

Ingredients
  

Green Goddess Dressing
  • 1 cup fresh basil
  • ½ cup parsley
  • ½ cup cilantro
  • 2 tbsp garlic, minced
  • ¼ cup dairy free mayo or ½ large avocado (I use Primal Kitchen Foods avocado mayo, use an avocado for vegan)
  • ¼ cup olive oil or avocado oil
  • 1 lemon
  • 4 green onions
Pasta Salad
  • 1 box bow tie pasta (I use Jovial Foods brown rice pasta)
  • 1 cup shredded carrots
  • 1 cup peas
  • 1 cup chickpeas
  • 1 cup arugula, packed
  • 1 cup cucumber slices
  • 1 cup cherry tomatoes, halved
  • 1 cup pine nuts
  • salt, to taste
  • fresh basil & cracked black pepper to top

Equipment

  • Food Processor or High Powder Blender

Method
 

  1. Cook pasta and peas according to instructions. When pasta is done, drain but don’t rinse with water. Instead, stir in a little avocado/olive oil.
  2. Combine dressing ingredients in a food processor or high power blender and blend until desired consistency is reached.
  3. Once pasta and peas are cooled, combine all ingredients in a large bowl and mix. Then mix in the dressing to cover completely.

      The fresher the better, but if you’re looking to make it ahead, it would work perfectly to make the dressing ahead of time then add all the ingredients together prior to serving. 🙂

    If I made this and kept in the fridge for 12 hours would it still be ok?
    Also what kind of cheese do you recommend??

      As long as the ingredients you use are good for 12 additional hours/not expiring that day! I’m not a big cheese expert, but maybe a burrata or shaved parm?

    Overall this was good! I used the chickpea pasta from Trader Joe’s and it turned out really well!

    I think the salad needed more than just a sprinkle of salt, and the dressing needed salt too.

    I will definitely make this again. Next time I’m considering omitting the pasta and using it as a base for a grilled chicken salad!

      Salt is super subjective! My family always adds more salt than me, haha! Salt to taste with any recipe and here as well 🙂 Would be delicious with grilled chicken! I believe I have a salad recipe on here using a similar dressing if you’re interested! Thanks, Laura!
