Green Dream Chicken Salad
What you’ll need:
- Chicken (or chickpeas for vegetarian/vegan)
- Celery
- Walnuts
- Mayo (click here for my homemade recipe or here for my egg-free recipe)
- Avocado
- Green Onions
- Chives
- Arugula
- Green Apples
- Garlic Powder
- Onion Powder
- Salt & Pepper

Green Dream Chicken Salad
Ingredients
- 1 lb chicken, cooked and chopped or shredded
- 1 cup celery, diced
- 1 cup walnuts
- ¾ cup compliant mayo
- 1 large avocado (~1 cup)
- ¼ cup green onions, chopped
- 2 tbsp chives, chopped
- ½ cup arugula
- 2 cups green apples, diced
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp salt
- ¼ tsp pepper
Instructions
- In a food processor, combine mayo and avocado. Blend until smooth and fully combined.
- In a large bowl, combine all of your ingredients and mix until everything is evenly covered in the avocado mayo "sauce."
- Enjoy with crackers, lettuce wraps, toast, chips or anything you like!
