These Gluten Free Walking Tacos are the perfect balanced, healthy and customizable meal for a get together or a fun weeknight dinner.
Gluten Free Walking Tacos
If you’ve never had a walking taco before, it’s basically a taco made with all of your favorite toppings inside of a individual sized chip bag (think Doritos or Fritos) and eaten straight out of that bag with a fork. Kind of like a taco to go! I’ve seen them at grade school sporting event concession stands and I’ve grown up eating them on my sister’s birthday for as long as I can remember.
Make it Your Own
The reason we made these every year on my sister’s birthday is because with the number of dietary needs that would be in attendance (gluten free, dairy free, vegetarian, etc.), this was the perfect meal option that anyone could fit into their diet! For me, I had more recently skipped out on the chips until this year when I found some healthy swaps to enjoy the meal the same way everyone else was!
Note that you can easily swap the ground beef for a meat alternative if you’re a vegetarian or ground turkey if that’s more your thing. You can also use whatever you like for sour cream and cheese, whether that be a dairy free version or not. The choices are all up to you!
Build Your Bag
The way I put together my walking taco is free from gluten, added sugars, grains, corn and dairy. When I opt to leave out sour cream or cheese of any kind, this recipe can also be paleo friendly. The avocado helps add some creaminess so you won’t even miss it!
What I use:
- grass fed ground meat
- an assortment of spices/seasonings
- shredded lettuce
- diced tomato
- diced red onion
- Siete Tortilla Chips (nacho or fuego flavor)
- dairy free sour cream (or sometimes Greek yogurt)
- avocado
- fresh lime

Gluten Free Walking Tacos
Equipment
- Brown Paper Bags
Ingredients
Taco Meat
- 1 lb ground beef
- 1 tbsp avocado oil or olive oil
- 1 tbsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- ¼ tsp dried oregano
- ½ tsp paprika
- 1 ½ tsp cumin
- 1 tsp salt
- ⅓ cup water
Toppings (Optional)
- shredded lettuce
- crushed chips (I use Siete Fuego Tortilla Chips)
- diced tomato or salsa
- sliced or diced avocado
- diced white or red onion
- fresh lime wedge
- cilantro
- sour cream or Greek yogurt
- cheese or queso
Instructions
- Add avocado oil to a skillet on the stove over medium/low heat. Once hot, add your ground meat to the skillet. Break apart as it cooks, then mix in the seasonings and water once browned. Transfer the meat into a bowl and set aside.
- Take brown paper bags (or bowls if that's all you have!) and roll down the tops. Fill the bags with chips, lettuce, taco meat and the rest of your toppings.

What a cute and clever idea! Silly question but, I’m assuming you’re using lunch-size paper bags, and if so…I would think the contents would leak out the bottom. No?

Hi Mel, that’s a great question! I did use lunch-size paper bags, yes. To keep from too much leaking, I put lettuce, chips, and other dry ingredients towards the bottom. You can also double the bags so that there is a little more structure. I didn’t have a problem with anything leaking too much, though! I hope that helps. 🙂
