Gluten Free Chicken and Dumpling Soup
I love to have soup prepped in the fridge so that I can reheat it and have lunch or dinner ready in minutes. Plus, this Gluten Free Chicken and Dumpling soup only takes 30 minutes to make, so it’s not only perfect for meal prepping, but also for a busy day when you have to cook!
DIETARY NOTES
This recipe is made with real ingredients and fits seamlessly into the following dietary needs when using the products/brands (or ones that are similar) listed in the recipe:

Make it Your Own
If you’re a vegetarian, feel free to swap the chicken broth and the chicken for veggie broth and tofu. Cutting back on dairy? While ghee does contain dairy, it is lactose free which makes it easier to digest, but you can simply swap olive oil instead. You can also use nut milk to make the dumplings to cut out some dairy there. Gluten free but not worried about grain? Swap the cassava flour for gluten free all purpose flour. You’ll need to use 1 cup instead of 3/4 cup if you do, though.
WHY CASSAVA FLOUR?
Instead of using coconut and almond flour to keep this recipe gluten and grain free, I choose to use cassava flour. It’s my favorite flour to bread things with as it makes the coating nice and flaky instead of grainy and makes for a neutral, doughy texture for the dumplings here.

Gluten Free Chicken and Dumpling Soup
Ingredients
Soup
- 2 tbsp avocado oil
- 5 cups chicken (bone) broth (I use Bonafide Provisions bone broth)
- 1 – 1½ lbs chicken breast
- 4 stalks celery
- 4 large carrots
- ½ onion
- 3 cloves garlic, minced
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme (or 1 tbsp fresh)
- 1/2 tbsp dried rosemary (or 1 ½ tbsp fresh)
- 1 tsp dried parsley (or 1 tbsp fresh)
- ½ tsp Italian seasoning
- 1 tsp salt
- ½ tsp pepper
Gluten Free Dumplings
- ¾ cup cassava flour (I use Otto's Naturals)
- 3 tsp baking powder (I use Otto's Naturals for paleo)
- ½ tsp salt
- 3 tbsp ghee, melted or olive oil
- ½ cup milk (regular or almond)
Instructions
- In a large pot over medium-high heat, combine broth, herbs and spices. Bring to a boil, then add the chicken and reduce heat to medium.
- Cover the pot with a tight fitting lid and let the soup simmer for 10 minutes or until chicken is cooked through.
- While you wait, chop your veggies and prepare the dumplings.
- Combine the dumpling ingredients and form into 8-10 balls using your fingers to pack the dough together gently.
- Once the chicken is cooked, remove it from the broth and set aside to let cool prior to shredding it.
- Add the veggies into the soup following by the dumplings, which you should place into the soup gently, spacing them out one by one. Pour a little broth over each dumpling and cover the pot with the lid.
- Turn the heat up slightly and allow the soup to simmer for 15 minutes, cooking the veggies and the dumplings as it does.
- Check to ensure the dumplings are done. They should be on the firm side, so if they are still soft or sticky, flip them in the broth and cook for a little longer.
- Once the dumplings are done, shred your chicken and add it back to the soup.
- Stir together and serve warm!

I thought tapioca flour and cassava were the same but they must be different because my dumplings turned out like a science experiment. It was liquid until I applied pressure and then it turned solid but once in the soup it liquified again and just turned to slime… would’ve loved for this to turn out since my daughter is allergic to eggs and grains.

Oh no no no! Cassava flour and tapioca flour are not interchangeable! Cassava flour is a more mild flour that can be used in baking more easily while tapioca flour is most often used as a thickening agent for soups and sauces. Be sure to never swap ingredients that are not recommended in the recipe before asking the recipe developer or doing a quick Google search in a time pinch, otherwise you can very often end up with slime, like you said. Hi Christy! I don’t calculate calories due to my past with disordered eating, it would be unsafe for me to cross that line. You are welcome to calculate the ingredients you use in the recipe for your own use, though! Also, servings are pretty subjective; however it makes approximately 6-7 cups of soup, if that helps! I LOVE chicken dumpling soup, but since needing to go gluten free, I just assumed dumplings were out of my life! I saw your post today and had already planned on making regular chicken soup, so I figured I’d the dumplings a try and they were so good! Made this during a snow storm and boy was it cozy! This was my first time making dumplings of any kind. I feel like I didn’t quite nail it because they were on the dense side. Delicious though! You definitely influenced me on the Ottos :-). My husband loved it too! Will definitely make it again.

I’m so sorry to hear that, Morgan! My thoughts for why this could have happened would be that the dumplings were not formed tight enough (gluten free baking is tricky, so it happens!) or they were not cooked enough before the soup was stirred. I’m glad you enjoyed the flavor of the soup though and appreciate the feedback!

Hi Rachel! I’m sure you can, however the measurements will not be the same. You’ll need to google the conversion ratio based on the flour you are using!
