This Zuppa Toscana is made from simple, nourishing ingredients creating a super balanced soup that will nourish you in the most comforting way. It’s delicious and filling while doing your body good with every bite.

Make it Your Own
I’m not a big spice person, so believe me when I say this is so good and isn’t overly spicy. However, if you’d rather, feel free to use sweet Italian sausage instead! You could also sub sweet potatoes if you’d like. The choice is yours! You can also add in additional veggies such as celery, zucchini and more, depending on what your favorites are!

Zuppa Toscana
Ingredients
- 1 lb spicy Italian sausage (can sub sweet sausage, check for compliance depending on dietary needs)
- 1 tbsp avocado oil or olive oil
- 4 cups chicken broth or chicken bone broth
- 3 cloves garlic, minced
- 1 onion, chopped
- 2 cups kale, chopped
- 1 lb bag gold potatoes, cubed
- 1 cup coconut milk
- 1 14.5 oz can diced tomatoes (check for compliant ingredients, need be)
- 1 tsp salt
- ½ tsp pepper
- 6 strips sugar free bacon, cooked & chopped (optional)
Instructions
- Brown the sausage on the stove over medium heat in 1 tbsp of avocado oil or olive oil.
- While the sausage cooks, prepare all the remaining soup ingredients aside from the bacon.
- Stove Top Option- Put all the ingredients into a pot on the stove and simmer until the potatoes are fork tender.
- Slow Cooker Option- Put all the ingredient into the slow cooker and cook on high for 3 hours or low for 6 hours or until potatoes are fork tender.
- While the soup cooks, cook the bacon on the stove or the oven (up to you!) then crumble pieces over the top when serving.

I loveeee this soup. I’ve tried other Whole30 Zuppa Toscana recipes but the tomatoes in this one makes it my favorite! The soup comes together very easily and is so yummy and comforting! Will definitely be making again.
