This Creamy Lemon and Herb Dressing is the perfect finishing touch to any salad you’re whipping up! It’s light, refreshing and the flavors pair well with just about everything. Plus, it’s made with a secret ingredient to help you get your probiotics in!

Whether the weather is hot, cold, or somewhere in between, I always love a good salad. As I’ve said before, no boring salads are welcome here. I love adding all the toppings which in turn add different varieties of flavors, textures and nourishment… what could be better?!

Topping Talk

To pair with this dressing, I chose to make a salad with:

  • mixed greens
  • cherry tomatoes
  • carrots
  • cucumbers
  • roasted chickpeas (click here for the recipe)
  • grilled chicken
  • roasted sweet potatoes (recipe shared below)
  • red onion
  • radish
  • grilled chicken with olive oil, salt and pepper
  • and of course, the dressing!

Let’s Talk About Dairy

While I personally try to limit my dairy for my own health reasons, I absolutely love the stuff, so I know it’s not realistic for me to do completely without. When I do have dairy, I choose to have high quality dairy products and opt for ones that have added health benefits where possible.

In this recipe, I use some of the unflavored Lifeway Kefir (which is basically drinkable yogurt) because it has the added benefit of probiotics. This product is made with natural ingredients and is free from added sugar, which can be hard to come by with dairy. Studies have suggested that probiotics found in kefir can boost your immunity, aid in digestive problems, improve your bone health and can even help in combating cancer!

Ingredients Method

Ingredients
  

  • 2 tbsp chives, chopped
  • 2 tbsp dill, chopped
  • 1 tbsp dijon mustard
  • 1 lemon (about 2 tbsp juice)
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 clove garlic, minced
  • ¼ cup olive oil
  • ½ cup Lifeway Kefir (can leave out if dairy free or sub coconut milk)

Method
 

  1. Prep all ingredients and add to a jar with a tight fitting lid.
  2. Shake until completely combined and enjoy! Keep leftovers refridgerated.
Roasted Sweet Potato Chips

Ingredients Method

Ingredients
  

  • 1 tbsp olive oil
  • ½ tsp salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ¼ tsp pepper

Method
 

  1. Preheat your oven to 425° and line a baking sheet with parchment paper.
  2. Slice sweet potato into thin circles (I use a mandoline) then place into a bowl and top with olive oil and seasonings.
  3. Cover sweet potatoes evenly then space out on your sheet ensuring they don't overlap so that they can get crispy.
  4. Bake for 15 minutes, flip, then bake for 5 more minutes or until crispy.
