This Copycat Cilantro Lime Chipotle Rice is super easy and perfect for meal prep for yourself or taco night with a group. It’s packed with just the right amount of flavor from fresh lime and cilantro, but comes together in less than 20 minutes!
Copycat Cilantro Lime Chipotle Rice
To be honest, I’m actually not a huge Chipotle fan. I know, I know… My fiance could (and sometimes does) eat it every single day of the week. While I can’t relate, I am absolutely obsessed with their rice and will sometimes order just a side of it to go with whatever I’ve made at home. That was until we whipped up this copycat version from the comfort of our own kitchen!
It’s easy, too
Not only does this recipe have the perfect amount of flavor from the cilantro and lime while being the right balance of sticky and fluffy, but it’s also so easy to whip up. You only need a few, real ingredients and less than 20 minutes of your time. Plus, you have the control over how much you’d like to prep, so it’s great for date night, serving a group or meal prep for a busy week. It’s up to you to decide how much you’d like to make, just double (or triple) the recipe!

Copycat Cilantro Lime Chipotle Rice
Ingredients
- 2 cups white rice
- 4 cups water
- 2 tbsp avocado oil
- 1 tsp salt
- β cup cilantro, chopped
- 2 tbsp lime, juiced
Instructions
- Combine rice, water, avocado oil and salt in a medium saucepan on the stove and bring to a boil.
- Once boiling, reduce the heat to low and cover. Let the rice simmer for 15 minutes or until no water remains.
- Remove from heat to cool slightly, then move to a bowl.
- Mix in the chopped cilantro and fresh lime. Add more salt to taste and serve!

I have not! I personally do not care for cauliflower rice, but it would be worth a try if you enjoy it! π
