This Chocolate Mandarin Posset is light and creamy with the perfect amount of sweetness. It’s surprisingly easy to make and is the perfect special dessert for any occasion, especially during the spring and summer.

What you’ll need:

  • Mandarin Oranges
  • Heavy Cream
  • Sugar
  • Salt
  • Lemon Juice
  • Vanilla Extract

Ingredients Method Notes

Ingredients
  

  • 5 mandarin oranges
  • 1 cup heavy cream
  • ½ cup sugar
  • 1 tbsp mandarin zest
  • pinch salt
  • ½ tbsp lemon juice
  • 3 tbsp mandarin juice
  • 1 tsp vanilla extract

Method
 

  1. Zest 1 mandarin and cut the remaining mandarins in half, then remove the insides ensuring not to break the shells.
  2. Juice the mandarins and strain the pulp, leaving just the juice.
  3. Add cream and sugar to a pot or saucepan then bring to a boil over a medium-high heat, stirring until the sugar dissolves.
  4. Reduce the heat to medium and boil for 3 minutes, stirring constantly. Adjust the heat if needed to prevent the mixture from boiling over.
  5. Remove the mixture from the heat then stir in the mandarin juice, lemon juice, vanilla extract, salt and zest. Allow to sit for 10 minutes to cool.
  6. Place the mandarin haves on a rimmed baking sheet to give yourself an easy way to transfer the treats. Strain the filling into the mandarin halves, then cover.
  7. Carefully place the treats in the fridge to set for 3-4 hours.
  8. Once set, top with chocolate shavings and orange zest and enjoy!

Notes

  • Dairy alternatives have not been tested yet for this recipe, so if you plan to subsitute for them, note that it may not work as planned!
  • Depending on the size of your mandarin halves, this recipe will make anywhere from 6-8 mini servings.
  • Save the excess mandarin juice to make simple syrup with for my Orange Tequila Espresso Martini, use it in a drink of your choosing or make morning shots!

    Love this recipe! Mine were smaller so I ended up using 7 mandarins and still had a little extra that I put into a ramekin. The touch of chocolate as garnish is *chefs kiss*. I used the extra mandarin juice and mixed it with sparkling water because juicing that many gave me significantly more than the 3 tbsp of juice need ( I would have still had juice left over with 5)

    They took just over 3 hours to set. I’ve been trying to cut back on cane sugars and have found monk fruit sugar as the perfect substitute.
