When it comes to dairy consumption, a lot of you know that I aim to limit my dairy as I find my body does best without large amounts of it. That being said, I have been experimenting with implementing high quality dairy (grass fed, raw, organic) into my diet and I have had no issues at all! If you cannot have dairy though, feel free to use alternatives that works best for you in this recipe!

Candied Bacon & Date Whipped Goat Cheese
Equipment
- Food Processor
Ingredients
Candied Bacon & Dates
- 2 strips bacon, cut into pieces
- 3 dates, cut into pieces
- 1 tbsp maple syrup
- 1 tbsp coconut sugar or brown sugar
Whipped Goat Cheese
- 8 oz goat cheese
- 8 oz cream cheese
- 2 tbsp fresh rosemary
- 2 tbsp honey, for sweet (sub olive oil for more savory)
- pinch salt
Instructions
- Preheat your oven according to the bacon instructions on the package.
- Cut the strips of bacon into small pieces and place in a bowl.
- Chop the dates into 8 pieces each. Add them to the bowl with the bacon.
- Add the maple syrup and sugar to the bowl and mix everything together until evenly coated.
- Space out the bacon and date mixture on a rimmed baking sheet lined with foil. Ensure the pieces aren't overlapping.
- Cook according to the bacon instructions on the package. Be sure to keep an eye on it so it doesn't burn!
- While that cooks, combine the whipped goat cheese ingredients in a food processor and blend until smooth.
- Add the whipped goat cheese to a bowl and keep in the fridge until the candied bacon and dates are done cooking.
- Once the candied bacon and dates are finished cooking, add them to the top of the goat cheese and serve right away!
Notes
- Be sure to watch the bacon and dates to ensure they don’t burn. If they cook too long, the dates can get too crunchy instead of soft.
- This is best served right after the candied bacon and dates are done cooking as that’s when they are the most soft.
