WHY CASSAVA FLOUR?
While mixtures of almond flour and coconut flour are great ways to keep recipes both gluten and grain free, they can sometimes turn out a bit on the grainier side. While I don’t always mind it since it still tastes delicious, I do prefer the result of using cassava flour instead! Plus, it’s a great way to cater to those that can’t have nuts or coconut!
Not all cassava flours are created equal. Some are grainy while others are super high quality. Otto’s Naturals is the only cassava flour I use, and they were nice enough to give me a discount code for you all! Use “kaylaskitchandfix” at checkout for a discounted price. This is a recipe for an Air Fryer!
I tested this recipe a handful of times, and it just works so much better in an air fryer vs. an oven, so I highly recommend using an air fryer for this recipe!
Other tips & tricks
- Count how many mini hot dogs/cocktail sausages you have and break apart your dough into that many pieces
- From there, gently but firmly roll each piece into a tight ball of dough
- Work with your dough very carefully, but the warmth of your hands and fingers should help make the dough mold together vs. crack apart, so have patience here!
- You can lightly spray the tops of the assembled pigs in a blanket with avocado oil if you’d like
