Pumpkin Spice Coconut Creamer

Healthy and easy at home pumpkin spice lattes and coffees of all kinds are my jammm in the fall and I don’t feel one but “basic” about it. Not only do I love the comforting seasonal flavor, but it’s also super nutritious as it’s packed with vitamins and antioxidants, just to name a few benefits. Plus, this recipe can be made to fit into just about any diet from dairy free to Whole30.

Not So Basic

Let’s get one thing straight. Pumpkin isn’t basic, it just means you have good taste, okay? Not only that, but it’s extremely good for you. It is packed with vitamins and it’s also good for the environment to eat seasonally. Need any more convincing to get your pumpkin indulgence this fall? Dive in, it’s good for you!

Ingredients Method

Ingredients
  

  • 1 14 oz can light coconut milk (light keeps it from hardening in the fridge, but full fat is okay too)
  • 2 tbsp pumpkin purée (make sure the only ingredient is pumpkin)
  • ½ tbsp vanilla extract
  • ½ tsp pumpkin spice
  • ¼ tsp nutmeg
  • 1 tbsp honey/maple syrup (optional, leave out for Whole30)

Method
 

  1. Combine ingredients in a pot on the stove over medium heat and whisk together until smooth.
  2. Let sit on the heat for a minute or two while continuing to stir.
  3. Remove from heat and cover with a lid for a few minutes to cool, then transfer into a jar to store in the fridge. If you’d like, you can strain the creamer into the jar for a smoother consistency. Lasts in the fridge up to a week!
  4. Brew your coffee, pour your desired amount into your mug and top with a sprinkle of cinnamon. Enjoy!
