This Flourless Double Chocolate Zucchini Bread is easy to make and tastes decadent all while being made from just simple, real food ingredients. It’s so fudge-y and dense and has that added nutritional bonus from the zucchini and the cacao powder. It’s a must make!

What you’ll need:

  • Zucchini
  • Coconut Sugar
  • Avocado Oil
  • Eggs
  • Vanilla Extract 
  • Cacao Powder 
  • Salt
  • Baking Powder
  • Chocolate Chips

Flourless Double Chocolate Zucchini Bread

Ingredients Method

Ingredients
  

  • 1 ½ cup shredded/grated zucchini
  • ¾ cup coconut sugar
  • ¾ cup avocado oil
  • 3 eggs
  • 1 tbsp vanilla extract
  • 1 cup cacao powder (Can sub cocoa powder)
  • 1 tsp salt
  • 1 ½ tbsp baking powder (I use Otto's Naturals)
  • 1 cup chocolate chips (I like to use mini, can also dust with a little cacao powder or cocoa powder to keep from sinking to the bottom)

Method
 

  1. Preheat your oven to 350℉ and line a 8.5 x 4.5 inch loaf tin with parchment paper.
  2. Grate your zucchini and wring dry using a nut milk or cheese cloth bag to remove as much of the moisture as you can.
  3. In a large bowl, mix together all of the ingredients until fully combined.
  4. Add the batter to the lined loaf tin.
  5. Bake for 1 hour and 20-30 minutes (or until a toothpick comes out clean from the center).
  6. Allow to cool for 10 minutes, then remove the bread from the loaf tin.
  7. Once fully cool, slice then store in an air tight container in the refrigerator!

    Delicious!! Crispy outside, gooey inside. I didn’t have chocolate chips and, although the final product is not super sweet, it still turned out great. Also used coconut oil instead of avocado. Worked out fine! We’ll see once everything cools.

      Oh so happy to hear coconut oil is a good alternative to avocado oil! Also glad it was still great sans chocolate chips. 🙂 They do add some sweetness, but I feel it would still be subtle and delicious without them. Thanks, Erin!!

    Delicious fudgy brownie with a rich chocolate flavor! I used vegetable oil and reduced the sugar to around 1/2 cup and it turned out great. I also didn’t add the chocolate chips, since the recipe is already quite rich and chocolately from the cacao powder. None of my friends could tell it has zucchini in it!

    Came across this on Instagram just in time for an anniversary. Such a hit! Like mentioned crispy on the outside and moist on the inside, just like a bakery cake. I was low on chocolate chips, so that and substituting with dates and maple sugar, did impact the sweetness. Thinking of trying sweet potatoes and a splash of blended oats next. This will definitely become a staple!

    I have made this exact recipe and it was delicious! I barely got any to myself because everyone in my family wanted an extra slice or two for take home. Will be making it again and keeping it a secret!
    Question for Kayla.. Do you think it be possible to swap zucchini for bananas. I’m interested to find out if it could be a good version of a double chocolate banana flourless bread.
