These easy, healthy and flavorful Honey Garlic Chicken & Veggie Skewers are the very best I’ve ever had! They are made from just real, simple food ingredients and are super low effort. They’re inspired by one of my favorite local (to me) restaurants and are a weekly staple!

Honey Garlic Chicken & Veggie Skewers

Honey Garlic Chicken & Veggie Skewers

What you’ll need:

  • Pineapple
  • Chicken
  • Red Onion
  • Zucchini and/or Summer Squash
  • Garlic
  • Olive Oil
  • Honey
  • Mayo (click here for my classic recipe or click here for my egg free recipe)
  • Paprika
  • Onion Powder
  • Salt & Pepper

Whole30 & Paleo Yum Yum Sauce
Pickle Brine Coleslaw

I like to serve these skewers with the following:

  • Yum Yum Sauce
  • Coleslaw (replace the apple cider vinegar with juice from the pineapple if you’d like!) or Veggie Packed Coleslaw
  • White Rice & Fresh Fruit (no recipes needed 🙂 )

Honey Garlic Chicken & Veggie Skewers

Ingredients Equipment Method

Ingredients
  

Marinade
  • 4 garlic cloves, minced
  • ¼ cup olive oil
  • ¼ cup honey
  • 1 tbsp mayo (I use one of my homemade recipes)
  • 2 tsp paprika
  • 1 tbsp onion powder
  • salt & pepper
Skewers
  • 1 lb chicken, cubed
  • 1 cup pineapple, cubed
  • ¼-½ red onion, cubed
  • ½ zucchini, cut into slices then in half
  • ½ summer squash, cut into slices then in half

Equipment

  • Skewers
  • Grill or Grill Pan

Method
 

  1. Make the marinade by combining all of your ingredients together.
  2. Cube your chicken, keeping in mind you'll want the rest of your ingredients to be around the same size. Then, combine the chicken and the marinade and allow to sit in the fridge for 30 minutes and up to overnight.
  3. Prep your pineapple, red onion, zucchini and summer squash, aiming to keep each piece around the same size as the chicken pieces.
  4. Once marinated, add the ingredients to a skewer in whatever order you like, grill evenly on all sides until cooked through and enjoy!

    I made this last night and it was a big hit! A tornado siren went off as soon as I turned my grill on, so we ended up cooking this in a skillet more like a stir fry but it was super delicious! Definitely going to go on the summer time meal rotation!
