Healthified Buckeyes

If you’re from the Midwest, or maybe even if you’re not, it’s likely that you’ve heard of the chocolate covered peanut butter ball dessert that many know and love. Because they’re so loved, I felt a pull to make a cleaner version, so I’m bringing you these Healthified Buckeyes!

IO! I was born and raised in NE Ohio and grew up loving Buckeyes during the holidays (or just whenever I could get my hands on them). Back then I obviously wasn’t worried about how much sugar I was consuming. Actually, I think I didn’t care as long as I was eating as much as possible! The more the merrier, as they say. (I’ve always loved my sweets, okay?!)

If you haven’t figured it out by now, one of my favorite things to do is recreate my favorite meals and treats by using real ingredients and healthy alternatives that fit better into my life now, especially with my food allergies and sensitivities! That being said, after the holidays last year, and eating my fair share of the delicious but typically butter heavy and sugar packed traditional Buckeyes, I knew I needed to make a Healthified Buckeyes version to the treat that I didn’t have to wait until December for!

Healthified Buckeyes

There is something so satisfying and rewarding about making versions of my favorite recipes and making better for you versions. It also makes it even better when I hear “this is better than the real thing!” Music to my ears.

And they’re easy too!

These heavenly little bites are so easy to make and are always a crowd favorite. They are the perfect addition to any gathering and are even fun to make with kids!

  • Enjoy Life Foods – Dairy/Allergen Free Chocolate Chips
  • Lily’s – Sugar Free Chocolate Chips

Healthified Buckeyes

Ingredients Method

Ingredients
  

  • 1 cup unsweetened peanut butter
  • 1 ¼ cup monk fruit powdered sugar (I use Lakanto for low sugar, can sub regular powdered sugar if needed)
  • 1 tsp vanilla extract
  • ½ – ¾ cup chocolate chips (I use Enjoy Life Foods to keep them dairy free, can use Lily's to keep sugar free)

Method
 

  1. Combine peanut butter and powdered sugar together until well combined. You may need to sift your powdered sugar to avoid clumps.
  2. Mix in your vanilla, then line a baking sheet with parchment paper.
  3. Roll peanut butter into balls about the width of a quarter. You should have around 20!
  4. Freeze the peanut butter balls for 20ish minutes or until very firm.
  5. Melt the chocolate chips and stir until smooth.
  6. Take the peanut butter balls out of the freezer and use a toothpick to dip each ball into the chocolate. Set each piece back onto the parchment paper lined baking sheet. Work quickly so that the peanut butter balls don’t soften!
  7. Once all of the balls are coated, place them back into the freezer until the chocolate has completely hardened.
  8. Keep refrigerated until ready to eat!
