This easy and absolutely delicious Tomato & Whipped Ricotta Crostini is only 10 minutes away from leaving you speechless. Seriously, this is one of those recipes that when you take the first bite, your eyes go wide and you can’t believe how good it is (especially with how simple it is to whip up)!

Whipped Ricotta Crostini

What you’ll need:

  • Baguette
  • Ricotta
  • Lemon
  • Garlic
  • Tomatoes
  • Salt & pepper
  • Basil
  • Chamomile Flowers (optional, for garnish)

Ingredients Equipment Method Notes

Ingredients
  

  • baguette, sliced into 15-20 pieces
  • 8 oz ricotta (dairy free, if needed)
  • 2 tsp fresh lemon juice
  • 1 garlic clove
  • salt & pepper, to taste
Garnishes (Optional)
  • lemon zest
  • cherry tomatoes, halved
  • basil
  • chamomile flowers
  • salt & pepper

Equipment

  • Food Processor
  • Toaster or Oven

Method
 

  1. Toast baguette according to the instructions or until golden.
  2. While it toasts, combine ricotta, lemon juice, garlic clove, salt and pepper in a food processor and blend until smooth.
  3. Spread the whipped ricotta onto the crostini or add the whipped ricotta to an icing bag to pipe it onto the crostini in a zigzag motion (as shown in the photos).
  4. Top with tomatoes, lemon zest, basil, chamomile flowers, salt and pepper!

Notes

These are best when enjoyed fresh! If you’d like, you can prepare the ricotta in advance and pipe or spread it onto the crostini right before serving.
