This Veggie Packed Coleslaw makes for a delicious, easy and healthy side dish or salad base that anyone is sure to love. It comes together in just 5 minutes and is made from just a few real food ingredients while sneaking in some extra veggies! It’s perfect for anything from a weekend cookout to a busy workweek lunch.
Veggie Packed Coleslaw
What you’ll need:
- Shredded Cabbage or Coleslaw Mix
- Broccoli Slaw or Other Shredded Veggies
- Avocado Mayo (see below for my recipes!)
- Apple Cider Vinegar
- Mustard
- Garlic Powder
- Onion Powder
- Lemon
- Salt & Pepper
I don’t use anything to sweeten mine, but if you want to add some to yours, absolutely go for it! I have tried it with Stevia or a little honey and both were great.

Hot Dog “Salad”
I absolutely cannot stop making this recipe for easy lunches throughout the week. Is it essentially coleslaw topped with two hot dog links? Yes. BUT, it’s a completely balanced (and obviously delicious) meal as it’s packed with veggies, healthy fat and protein. I always use the most high quality protein I can find, such as hot dogs or sausage or even burgers made with just real food ingredients.
Because of the brands I use for protein, this recipe is completely Whole30 and paleo compliant!
If you’re a vegan or vegetarian, simply swap in your favorite protein source! Or if you don’t like hot dogs, use a protein you enjoy. Make it meet your dietary needs and taste preferences!

Veggie Packed Coleslaw
Ingredients
- ½ bag shredded cabbage or coleslaw mix (~2 cups)
- ½ bag broccoli slaw or shredded veggies (~2 cups)
- 1 cup avocado mayo (regular and egg free recipes on my blog!)
- 2 tsp apple cider vinegar
- 2 tsp mustard (check ingredients for Whole30 and paleo)
- 1 tsp garlic powder
- 1 tsp onion powder
- squeeze fresh lemon
- salt and pepper, to taste
Instructions
- Combine all ingredients in a large bowl and mix until fully combined.
- Taste and add any additional mayo, mustard, salt and pepper, spices, etc. to meet your preferences.
- Serve as a side or as a "salad" base and enjoy!

This is great! I made mine with apple chicken sausage and also made some potatoes in the air fryer with avocado oil, salt, pepper, garlic, onion, and smoked paprika because I wanted some carbs with it. Another great recipe!
