This Hugo Spritz is made with just 3 ingredients and is the perfect slightly sweet yet light and refreshing cocktail or mocktail to whip up. You can make it to be free from alcohol or have it sparkle with Prosecco bubbles and are free to adjust the sweetness to your taste preferences. It’s easy, it’s delicious and it’s an absolute crowd favorite.

Hugo Spritz
I first had this drink in the South of France last summer and have been thinking about it since. I absolutely LOVE cocktails with elderflower in them, but I wanted to find a way to enjoy it sans alcohol. With that, I have two ways for you to make this classic drink… one way with alcohol and one way without so anyone can enjoy it!
Prosecco Version:
- Prosecco
- Elderflower Liqueur or Elderflower Syrup
- Soda Water
Non-alcoholic Version:
- Prosecco or Sparkling Wine Substitue (I use alcohol removed sparkling wine)
- Elderflower Syrup (homemade recipe included below!)
- Soda Water

Hugo Spritz
Ingredients
Prosecco Version
- 3 fl oz Prosecco
- 1-2 fl oz elderflower liqueur or elderflower syrup
- 1 fl oz soda water
Non-Alcoholic Version
- 3 fl oz sparkling wine zero proof alternative
- 1-2 fl oz elderflower syrup
- 1 fl oz soda water
Garnishes
- ice
- lime wedges
- mint sprigs
Elderflower Syrup
- 1 cup sugar or monk fruit
- 1 cup water
- ½ cup dried elderflowers
Instructions
Elderflower Syrup
- Combine water and sugar or monk fruit in a pot on the stove over medium heat.
- Bring to a slight simmer and keep an eye on the mixture, mixing lightly as it dissolves.
- Once the mixture is clear and the sugar is completely dissolved, remove the pot from the heat and mix in the dried elderflower. Allow to sit for 5-10 minutes, mixing every so often.
- Using a strainer to catch the elderflowers, pour the syrup into a container and set aside. Store in the fridge with a lid.
Hugo Spritz
- In a glass, pour in all of the ingredients and then fill it with ice.
- Garnish with a lime wedge and a mint sprig. Cheers!
