May 30, 2023 by kaylaskitchandfix Leave a Comment

This Pickle Hummus only takes 5 minutes of your time, a handful of ingredients and is packed with nutrients and flavor. It’s sure to be loved by everyone you share it with whether it’s a side dish with dinner, an appetizer at a gathering or a snack between meal times. My family loved this one so much that it only lasted at our last get together for a matter of minutes! PLUS it should be noted that I doubled the recipe. It’s truly that good!

A NOTE ON CALORIE COUNT, NUTRITIONAL INFO AND SERVING SIZES

Due to my past experiences, I do not include most of the above information within my recipes as it is unsafe for me to do so personally. While I try to share a rough estimate when it comes to the serving size, please note that it is very subjective as we all have different hunger levels both from person to person and even from meal to meal.

If any of the above information is important to you, I understand! We are all different and have various goals and needs. If you’d like, you are welcome to calculate the information needed based on the ingredients you use when making one of my recipes.

I hope you understand! This comes from a place of love and protection both for myself and others like me. If you ever have any questions, send me an Instagram message for the quickest response time! Thank you for being here!

Total Time 5 minutes mins
Course: Appetizer, Dip, Side Dish, Snack
Ingredients Equipment Method

Ingredients

Pickle Hummus
  • 2 tbsp tahini
  • 1-2 cloves garlic
  • 3 tbsp olive oil
  • 1 tsp cumin
  • 2 tsp dill weed/dried dill
  • ¼ cup pickes, sliced to blend in
  • ¼ cup pickles, diced to stir in
  • ¼ tsp salt
  • 2-4 tbsp pickle brine/juice, separated
  • 1 15 oz can chickpeas/garbanzo beans, drained
Garnishes (Optional)
  • ¼ cup pickles, diced
  • olive oil drizzle
  • dill, fresh or dried

Equipment

  • Food Processor or High Powered Blender

Method

  1. Combine all ingredients in a high powered food processor or blender and blend until smooth. TIP: If your food processor or blender isn’t super high powered, leave out the chickpeas and pickle brine/juice and blend everything else together first. Then, in two batches, add in the chickpeas and pickle brine/juice to blend. This helps create a really smooth texture!
  2. Stir in remaining ¼ cup diced pickles and taste. You can add in more pickles here if you’d like!
  3. Spoon into a bowl and top with more diced pickles, a drizzle of olive oil and dill.
  4. Dip with whatever you’d like and enjoy!
