Berries & Homemade Whipped Cream

This is such a fun, no bake dessert option as it’s of course delicious and easy but it’s also perfect for customizing or even having out for guests to make their own at a gathering. You can fully customize this recipe to make as many servings as you’d like as it depends on the size/shape of the jar you’re using. That being said, use whatever vessel you’d like from canning jars to drinking glasses if that’s what you have on hand. You’re also welcome to use your favorite berry or berries as well as making the base from crushed cookies, graham crackers or popcorn (like I did). If you’d rather, you can skip the base all together and enjoy the berries and cream alone. Get creative and make it all your own!

What you’ll need:

  • 1 can coconut cream, chilled in the fridge overnight
  • Powdered sugar or monk fruit powdered sugar
  • Vanilla extract
  • Hand mixer
  • Large bowl

Tips & Tricks:

  • Chill your can of coconut cream in the fridge overnight if you have the time, if not, it should be just fine!
  • 30 minutes before you make the whipped cream, place your glass bowl and hand mixer beaters in the freezer to chill.
  • Use only the hardened part of the can of coconut cream and leave behind the liquid.
    • Save the coconut water for smoothies if you wish!
  • Coconut cream can be tricky, so I always buy an extra can just incase I grabbed one that doesn’t hold its shape! If the coconut cream doesn’t hold its shape after a minute of mixing, opt for the new can.

Ingredients Equipment Method Notes

Ingredients

  • 1 15 oz can coconut cream, chilled in the fridge overnight (use the scoopable part only!)
  • ¼ cup powdered sugar (monkfruit powdered sugar for sugar free & paleo)
  • 1 tsp vanilla extract

Equipment

  • Hand Mixer

Method

  1. Place jar of coconut cream in the fridge to chill overnight.
  2. 30 minutes before you make the whipped cream, place your glass bowl and hand mixer beaters in the freezer to chill.
  3. Once the bowl and beaters are cold, remove the hardened part of the can of coconut cream from the can, leaving behind the liquid, and add to the bowl. You can use the remaining coconut water for smoothies if you wish!
  4. Whip the coconut cream for 1 minute until thick yet smooth.
  5. Add the vanilla and powdered sugar, then mix until fully incorporated.
  6. Keep cold until ready to serve.

Notes

Coconut cream can be tricky, so I always buy an extra can just incase I got one that doesn’t hold it’s shape!
