Paleo Bruschetta Chicken
This Paleo Bruschetta Chicken is easy to make with minimal ingredients and prep while also being packed with delicious fresh flavors. It comes together with a simple seasoning on the grilled chicken and homemade bruschetta and balsamic glaze. Everything is made with real, whole foods and takes less than 30 minutes total.
Bruschetta
What you’ll need:
- tomatoes (any kind, I like to do half beefsteak and half cherry)
- garlic cloves
- extra virgin olive oil
- balsamic vinegar (check ingredients for compliance with the paleo diet)
- fresh basil
- salt & pepper
This bruschetta is so easy and also perfect for an appetizer outside of this recipe!
Honey Balsamic Glaze
What you’ll need:
- balsamic vinegar (check ingredients for compliance with the paleo diet)
- raw honey
You can, of course, opt for store bought balsamic glaze here, however it may not be compatible with a paleo diet. You can also seek out a Whole30 compliant balsamic glaze recipe to make this dish compliant with the program, or you can skip the glaze and just use a drizzle of balsamic vinegar!

Paleo Bruschetta Chicken
Ingredients
Chicken
- ~1 lb chicken breast (4 chicken breasts, cut thin)
- 2 tbsp extra virgin olive oil
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tbsp Italian seasoning
- squeeze fresh lemon
- pinch salt
Bruschetta
- 2 cups tomatoes, diced (can be whatever tomatoes you like, but aim to avoid seeds and soft pieces)
- 2 cloves garlic, minced
- 1 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar (check for paleo compliant ingredients)
- ⅓ cup fresh basil, roughly chopped
- salt and pepper, to taste
Instructions
Chicken
- Mix all ingredients aside from the chicken itself until evenly combined.
- Cover the chicken in the marinade and cook your chicken on the stove or on a grill until cooked completely.
Bruschetta
- Dice the tomatoes, mince the garlic and chop the basil.
- Add all ingredients to a bowl and mix gently to combine.
To Serve
- Plate chicken and top with the bruschetta and a drizzle of the homemade balsamic glaze or balsamic vinegar, if using. Garnish with fresh basil and enjoy!
Honey Balsamic Glaze
Ingredients
- ½ cup balsamic vinegar (check for paleo diet compliant ingredients)
- 2 tbsp raw honey
Instructions
- Add balsamic and honey to a pan on the stove and simmer until bubbling over medium heat.
- Once simmering, change the heat to medium-low and let reduce (thicken) for 10 minutes, stirring often. Allow the glaze to cool.
- If the glaze hardens, simply reheat it slightly in the microwave in 15 second increments.
