This Sparkling Bees Knees Cocktail is sweet and fizzy with delicious honey and lemon flavors swirled into your favorite vodka and champagne. It only requires four ingredients and no weird additives so you can sip deliciously knowing that what you see is what you get.

I made this cocktail for my sister’s bridal shower and it was a major hit. No seriously, it was gone before we were 30 minutes into the afternoon! Her and her now husband met on the Bumble dating app so we thought it was fitting to have the shower be bee themed. I knew I wanted a variation of the classic Bees Knees cocktail, but since she loves bubbles, I wanted to add that fizzy twist. So now we’re here with this delicious cocktail that I can’t wait for you to try for yourself!

Plus, it’s easy too.

What You’ll Need

  • fresh lemon
  • champange or prosecco of choice
  • vodka of choice
  • honey simple syrup (preferably homemade to avoid any weird additives)

Honey Simple Syrup

When I tell you simple syrup was named correctly, I mean it. It could not be more simple! Traditional simple syrup is made with equal parts water and sugar, and the same goes for this honey flavor. It’s just equal parts honey and equal parts water on the stove. See the recipe for full instructions, but I promise you, it couldn’t be easier.

Ingredients Method

Ingredients
  

  • 1 cup water
  • 1 cup honey

Method
 

  1. Combine equal parts water and honey in a sauce pan and bring to a boil on the stove, keeping a close eye on it.
  2. Once boiling slightly, bring the heat down to low and allow to simmer, stirring often.
  3. When the consistency is thicker than water and the honey is fully combined, remove from heat and allow to cool.
  4. Add the syrup to a jar with a lid and store in the fridge until ready to use.

Ingredients Method

Ingredients
  

  • 1 oz vodka
  • squeeze fresh lemon
  • ½-1 oz honey simple syrup
  • ~4 oz champange or prosecco

Method
 

  1. Chill champage or prosecco in advance if you'd like.
  2. In a glass, combine vodka, fresh lemon and honey simple syrup. Stir to combine.
  3. Top the glass with your favorite champagne or prosecco. Cheers!
