These delicious and healthy Gluten Free Protein Crepes are made easily in your blender and are done in just under 10 minutes. They are made with simple, good for you ingredients and can even be prepared to be super low in sugar while being naturally gluten free and dairy free.

These crepes are not only delicious and healthy, but they’re insanely easy. You essentially throw all of your ingredients into a blender, bake them in a skillet and that’s it! Add your favorite toppings and fillings and enjoy these extra knowing that you are doing your body good with this recipe.

Ingredients Equipment Method

Ingredients
  

  • ½ cup cassava flour (I use Otto's Naturals)
  • 2 tbsp vanilla protein powder (I use Nutrilite Organics Vanilla Protein Powder)
  • ¼ cup water
  • ¾ cup unsweetened vanilla almond milk
  • 2 eggs
  • ½ tsp vanilla extract
  • 2 tbsp monk fruit sugar (I use Lakanto or Miss Jones Bakes for sugar free, can sub regular sugar)
  • ¼ tsp salt
  • oil for baking in the skillet

Equipment

  • Blender

Method
 

  1. Add all ingredients to a blender and blend until smooth.
  2. In a skillet over medium heat, add a small bit of oil to grease the skillet.
  3. Pour in about a fourth cup of batter ensuring it spreads out on the skillet.
  4. Allow to cook until bubbles form, the flip and cook for a few more minutes. Crepes should be flexible and on the thin side.
  5. Once both sides are golden, remove from the skillet and serve with toppings of your choice.
