Gluten Free Protein Crepes
These crepes are not only delicious and healthy, but they’re insanely easy. You essentially throw all of your ingredients into a blender, bake them in a skillet and that’s it! Add your favorite toppings and fillings and enjoy these extra knowing that you are doing your body good with this recipe.

Gluten Free Protein Crepes
Equipment
- Blender
Ingredients
- ½ cup cassava flour (I use Otto's Naturals)
- 2 tbsp vanilla protein powder (I use Nutrilite Organics Vanilla Protein Powder)
- ¼ cup water
- ¾ cup unsweetened vanilla almond milk
- 2 eggs
- ½ tsp vanilla extract
- 2 tbsp monk fruit sugar (I use Lakanto or Miss Jones Bakes for sugar free, can sub regular sugar)
- ¼ tsp salt
- oil for baking in the skillet
Instructions
- Add all ingredients to a blender and blend until smooth.
- In a skillet over medium heat, add a small bit of oil to grease the skillet.
- Pour in about a fourth cup of batter ensuring it spreads out on the skillet.
- Allow to cook until bubbles form, the flip and cook for a few more minutes. Crepes should be flexible and on the thin side.
- Once both sides are golden, remove from the skillet and serve with toppings of your choice.
