This Blueberry Compote is easy to make yet is so delicious while only using a few simple ingredients. It only takes 15 minutes yet will take any sweet breakfast to the next level!

Blueberry Compote

What you’ll need:

  • Blueberries
  • Water
  • Sugar or Monk Fruit
  • Tapioca Starch or Arrowroot
  • Vanilla Extract
Lemon Poppyseed Pancakes
Chickpea Flour Pancakes
Cassava Flour Pancakes

Pancakes to Pair:

  • Dressed Up Box Lemon Poppyseed Pancakes
  • Chickpea Flour Pancakes
  • Cassava Flour Pancakes

Ingredients Method

Ingredients
  

  • 3 cups blueberries (frozen or fresh)
  • ½ cup water
  • 3 tbsp sugar (use monk fruit for paleo/sugar free)
  • 1 ½ tbsp tapioca starch mixed with 3 tbsp water
  • ½ tsp vanilla extract

Method
 

  1. Heat 1 ½ cup of blueberries on the stove over medium heat and cover with water. Stir in sugar and vanilla and wait for berries to come to a low boil.
  2. Add water and tapioca mixture to the pan, stir, then bring to a roaring boil.
  3. Turn the heat down to low and let sit until the sauce reaches the desired consistency.
  4. Remove from heat and add remaining 1 ½ cup of blueberries.
  5. Stir then serve over your breakfast of choice!
