Flourless Chocolate Chip Zucchini Bread

Tired of banana bread? Switch things up with this naturally sweetened treat!

Lately I’ve been doing my best to make the most of this crazy situation we are all facing by doing things at home that make me happy, like baking lightened versions of my favorite treats. Add this lightly sweetened and Flourless Chocolate Chip Zucchini Bread to your list of things to bake while hiding out at home and thank me later.

Flourless Chocolate Chip Zucchini Bread

Ingredients Method

Ingredients
  

  • 1 zucchini shredded
  • 2 eggs
  • ⅛ cup maple syrup or honey
  • ½ cup unsweetened peanut butter
  • 1 tsp baking soda
  • 2 scoops collagen can sub protein powder of choice
  • 1 tsp cinnamon
  • ½ dark chocolate bar or handful chocolate chips
  • Pinch sea salt to top optional

Method
 

  1. Preheat oven to 350 degrees and line a baking tin with parchment paper.
  2. Shred zucchini onto a towel or into a nut milk bag to wring out moisture. The drier the better here!
  3. Mix together zucchini, eggs, syrup/honey and peanut butter until combined.
  4. Stir in collagen/protein powder, baking soda, cinnamon and majority of the chocolate.
  5. Spoon batter evenly into the tin and top with the remainder of chocolate.
  6. Bake for 45-50 minutes.
  7. Top with sea salt and slice the loaf into little pieces of heaven.
