Asian-Inspired Turkey Lettuce Wraps

Ingredients
  

Turkey Filling

  • 1 tbsp avocado oil or olive oil
  • 1 shallot (can sub ½ an onion)
  • 3 cloves garlic, minced
  • 1 5 oz can diced water chestnuts
  • 1 lb ground turkey
  • 2 cups broccoli slaw or shredded cabbage

Sauce

  • ¾ cup coconut aminos
  • 2 tbsp compliant almond butter
  • 2 tbsp sesame oil
  • 1 tbsp compliant hot sauce
  • 1 tbsp rice vinegar (use apple cider vinegar for paleo)
  • ½ cup raw cashews
  • salt and pepper, to taste

Toppings

  • sliced green onions
  • sesame seeds
  • fresh lime wedge
  • butter lettuce

Instructions
 

  • Heat avocado oil or olive oil in a pan over medium to low heat.
  • Add in your chopped onion or shallot and cook until translucent, then add in the minced garlic and water chestnuts. Sauté everything together for a minute or so until fragrant.
  • Add in the turkey and cook until browned.
  • Add in the broccoli slaw or shredded cabbage, salt & pepper and the sauces and stir until combined.
  • Let simmer for a few minutes until the sauce thickens and absorbs.
  • Stir in the cashews and cook for a few minutes.
  • Spoon your finished product over top of lettuce wraps and top with green onions, sesame seeds and a squeeze of fresh lime.
