Wash, dry and slice your tomatoes about ¼ in thick.
Heat avocado oil or olive oil in a pan on the stove over medium to low heat until warm. You'll want to oil to be warmed up before you start to fry the tomatoes!
Whisk together egg and coconut milk in one bowl and the cassava flour with the seasonings in another.
Once the oil is hot, dip each tomato slice in the egg and milk mixture, ensuring to cover each side, then move to the flour mixture.
After completely coating the tomato entire slice in the flour, add it to the heated pan. It should sizzle!
Cook each side until browned (about 3-5 minutes) and repeat with all of the tomatoes.
Serve warm with aioli/sauce for dipping, in your favorite sandwich/burger or over a salad!
Notes
For best results, reheat leftovers in an air fryer, oven or conventional toaster oven.
