Gluten & Grain Free Fried Green Tomatoes

Ingredients
  

  • 3 firm green tomatoes
  • ½ cup avocado oil or olive oil
  • 2 eggs
  • ¼ cup milk (I use coconut milk)
  • ½ cup cassava flour (I use Otto's Naturals)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp salt
  • fresh basil, to top (Optional)
  • aioli, to serve (Optional)

Instructions
 

  • Wash, dry and slice your tomatoes about ¼ in thick.
  • Heat avocado oil or olive oil in a pan on the stove over medium to low heat until warm. You'll want to oil to be warmed up before you start to fry the tomatoes!
  • Whisk together egg and coconut milk in one bowl and the cassava flour with the seasonings in another.
  • Once the oil is hot, dip each tomato slice in the egg and milk mixture, ensuring to cover each side, then move to the flour mixture.
  • After completely coating the tomato entire slice in the flour, add it to the heated pan. It should sizzle!
  • Cook each side until browned (about 3-5 minutes) and repeat with all of the tomatoes.
  • Serve warm with aioli/sauce for dipping, in your favorite sandwich/burger or over a salad!

Notes

For best results, reheat leftovers in an air fryer, oven or conventional toaster oven.
