There is nothing better than having one of those quick, easy and healthy recipes on hand to get you through the busy days. It also helps when that recipe is delicious, so you actually look forward to it. This Egg Roll in a Bowl with two ingredient Spicy Mayo is one of those recipes, plus it’s perfect for both lunch or dinner!
Egg Roll in a Bowl
We love a delicious and easy throw together recipe that is perfect for either lunch or dinner! I’ve honestly had this recipe for lunch AND dinner two days in a row, that’s how much I love it. You basically toss all of the ingredients in a skillet or pan on the stove to cook and you end up with a super flavorful and nourishing meal! Whether making it for your family after a crazy day at work or meal prepping it for yourself for a few days of meals, this is one you’re going to want to add into your weekly routine.
Plus, it’s Whole30 Compliant
I love to make the majority of my recipes Whole30 compliant because that way, they can fit into the dietary needs of most people! These recipes are free of grains, legumes, dairy and gluten. Plus, they’re also free from added sugars! BUT don’t think for a second that these recipes aren’t delicious because they’re without those things. My Whole30 recipes are actually some of my favorites, and I absolutely love to eat them whether on a round or not!
So, that being said, whether you’re on Whole30 or not, these recipes are great for anyone to enjoy while not even realizing they’re enjoying meals made from real, natural ingredients!

This recipe will be a repeat for sure! So much flavor in such a simple recipe – and just the right amount of heat. We meal prep every week, so we doubled to get our 4 meals each. Would recommend!

I love that you meal prepped this recipe, Kelsey! Perfect for that! Thanks so much for making and leaving a rating/review! 🙂
Tasha Nunnelley
This was absolutely the most delicious dish! I made this for a double date night, and my friends even agreed! They took the leftovers home with them! I used kimchi hot sauce and it gave the perfect amount of heat. I also used your homemade yum yum sauce, and it took it to the next level!
kaylaskitchandfix
Thank you so much for making this and for sharing it with friends, Tasha! I am thrilled to hear it was a hit with everyone! Also I love that you added kimchi and paired it with my Yum Yum Sauce! I need to try that next! 🙂
Athena
So tasty – we’ve had it twice in the past two weeks. My goal is to have leftovers to enjoy because both times we’ve eaten all portions day of!
kaylaskitchandfix
Sounds like your household and mine have a lot in common, haha! So thrilled you love this recipe, Athena. 🙂 Thank you!
