Vegan & Paleo Herby Sunchoke Salad
These roasted sunchokes remind me of the taste and texture of a potato and the herby dressing is one you’ll want to eat every taste drop of with a spoon. It’s light yet satisfying and feels fancy but is actually so simple to make. If you haven’t tried sunchokes yet, they are shockingly delicious and extremely good for you.
What are sunchokes?
If you’re wondering what a sunchoke is, they are also known as Jerusalem artichokes and are a part of the root family. They are mild in flavor and are slightly sweet and crunchy. When you bake them, the outside stays crunchy and the inside is soft, like a potato! I was honestly shocked at how much they reminded me of a potato in this recipe.

Vegan & Paleo Herby Sunchoke Salad
Ingredients
- 1 lb sunchokes
- ¼ cup 1 tbsp extra virgin olive oil, separated
- 2 tsp dill (dried or fresh)
- 1 tbsp chives (dried or fresh)
- 1 tbsp dijon mustard
- ½ lemon, juice of
- 1 clove garlic, minced
- 2 tsp apple cider vinegar
Instructions
- Preheat your oven to 425° and line a baking sheet with parchment paper.
- Chop sunchokes into slices/rounds then add to your baking sheet.
- Drizzle a tbsp of EVOO and a sprinkle of salt and pepper onto the sunchoke rounds and combine until they are evenly coated.
- Spread out the rounds on the backing sheet so that they are not overlapping.
- Bake the sunchokes for 20-25 minutes or until golden.
- Combine EVOO, dill, chives, dijon, lemon, garlic, apple cider vinegar, salt and pepper and mix until combined.
- Once the sunchokes are golden, add to a bowl with the dressing and gently stir until evenly coated.
- Serve and enjoy immediately!
