These 4 ingredient Vegan & Gluten Free Buffalo Chickpea Taquitos are delicious, healthy and take just 20 minutes to make from start to finish. They’re made with just a few simple ingredients and are amazing when paired with homemade ranch (click here for the recipe!).

Vegan & Gluten Free Buffalo Chickpea Taquitos

These taquitos are as easy to make as they are delicious to eat. You only need 4 ingredients to make them and 20 minutes of your time. They’re the ideal healthy recipe to make if you need a quick appetizer or a fun dinner.

TIPS & TRICKS

To keep these taquitos gluten free, I like to use Siete brand tortillas. They come in a a variety of flours to meet multiple dietary needs. To ensure that the tortillas are flexible and don’t crack as you roll them, you’ll need to heat them slightly in the microwave or heat them on the stove in a skillet for a few seconds. If you use Siete brand, the heating instructions will be on the package.

To make the chickpea filling, I blend chickpeas with enchilada sauce in a food processor, but you can also use a high powered blender or even a fork and some elbow grease!

Use whatever buffalo or hot sauce you have on hand or can find in the store. Just be sure to check the ingredients to avoid added sugars if that’s something you pay attention to. And of course, use whatever tortillas you want that meet your needs. All in all, you can make whatever modifications you need to make these taquitos fit your diet as well as what ingredients you have on hand or that are accessible to you.

Ingredients
  

Buffalo Chickpea Taquitos
  • 1 15 oz can chickpeas/garbanzo beans
  • ¼ cup buffalo sauce (I recommend The New Primal brand, but others work just find as well)
  • 8 tortillas (I recommend any of the Siete brand tortilla varieties)
  • avocado oil or olive oil spray
Toppings (Optional)
  • ranch (I use my homemade ranch recipe)
  • shredded lettuce
  • cilantro

Method
 

  1. Preheat your oven to 425°.
  2. Drain and rinse your chickpeas.
  3. In a food processor, blend chickpeas with the buffalo sauce until throughly combined. You can also do this in a bowl with a fork if you don’t have a food processor.
  4. Since you’re working with gluten free tortillas, you’ll need to heat them slightly to make them flexible and ensure they don’t crack while rolling them. Heat each tortilla on the stove for 10 seconds per side or heat in the microwave for 15 seconds.
  5. Place approximately two tbsp of the chickpea mixture near one side of the tortilla, then roll to form the taquito.
  6. Place the seam side down on a baking sheet.Spray the taquitos with avocado oil or olive oil spray.
  7. Bake for 15-20 minutes until the taquitos are golden.
  8. While they cook, mix together the avocado dip ingredients until smooth.
  9. Serve warm with desired toppings and dips.

Notes

To reheat leftovers, an air fryer or conventional oven works best to re-crisp the taquitos.

    Loved these buffalo chickpea taquitos!! Made for a perfect lunch. I ended up cooking mine in the air fryer, which worked well! I did about 10-12 minutes at 400 degrees and flipped halfway through. Will definitely be making these again!

    I made this recipe and it was delicious. I added cooked shrimp to the food processor with the chickpeas and hot sauce.

    These were so delicious! Even my picky husband liked them. Easy to make too! Definitely recommend running them through a blender, the fork method was very time consuming lol. Adding to our weekly rotation.
