This slightly bubbly and completely refreshing Sparkling Cucumber Gimlet is about to be your new go-to summer drink! It’s made with all natural ingredients and zero sugar (by using my homemade sugar free simple syrup), so it can easily fit into your routine! Plus, I also have a mocktail version so if alcohol isn’t your thing, I’ve got you covered!

Before we dive into this recipe, let me just tell you this. Before tasting this drink, I would tell anyone and everyone that I don’t like gin. This drink has completely changed my mind! The flavor pairs perfectly with the refreshing and light cucumber, the bubbly sparkling water and the tiniest bit of sweetness from my easy Sugar Free Simple Syrup. Make it a Mocktail

Not only is this little cocktail light and refreshing, but it’s perfect for making into a mocktail (aka a nonalcoholic drink)! I actually prefer to enjoy this recipe as a mocktail, and to do so, I use Damrak Virgin Gin. I’m not kidding when I tell you that this product made me a believer in mocktails and gin alike! Gin not your thing?

Honestly, before I tried this drink, I would have told you the same thing. I’m confident that this recipe will change your mind! However, if you’d rather, you can swap the gin for vodka.

Sparkling Cucumber Gimlet

Ingredients
  

Sparkling Cucumber Gimlet
  • 1 oz simple syrup (I make my own sugar free, recipe linked above!)
  • 6 cucumber slices
  • 1/2 lime, juiced
  • 3 oz gin (I use Damrak Virgin Gin, can also use regular or sub vodka)
  • 4 oz sparkling water
Garnishes (Optional)
  • cucumber slices
  • thyme

Method
 

  1. Muddle your cucumber slices in simple syrup until slightly smashed, then squeeze in your lime juice.
  2. Pour in your gin and add in ice, then stir with a long spoon until combined.
  3. Pour into a glass (with or without ice, your call!) using a strainer to ensure you're not getting any ice or cucumber bits.
  4. Top the drink with sparkling water and garnish with cucumber slices and fresh thyme if you'd like. Cheers!
