It’s no secret that fall is busy, so it’s safe to say we are all in need of quick and easy yet nourishing and delicious meals that keep us satisfied and ready to take on the day. This easy Sheet Pan Harvest Bowl is the perfect option for meal prepping and enjoying throughout your busy days. Plus, it’s very versatile so there’s a way to build a bowl that everyone will love!

Sheet Pan Harvest Bowl

Easy, healthy and versatile? Count me in. This Sheet Pan Harvest Bowl is great for meal prep since all you have to do is prepare your ingredients in less than an hour to have an assortment of nourishing staples to toss together for a filling and nutrient dense meal.

Make it Your Own

This recipe is a great option to suit multiple dietary needs. Vegetarian? Leave out the chicken and double up on hard boiled eggs for protein. On a round of Whole30? Leave out the goat cheese, maple syrup in the dressing and skip the rice. Dairy free? Omit the goat cheese! It’s also easy to add in and veggies or fruits you love or prefer, so feel free to make it suitable to your taste and needs!

I’ve been wanting to bring you this recipe for awhile now, and I was so excited that I was able to partner on it with Blue Sky Family Farms free range and pasture raised eggs. What I love about this brand is more than just their high quality eggs, but the fact that they truly care about both their chickens as well as the environment. BSFF chickens have room to roam across over fifty acres which makes them healthier because they get the chance to act and live as they would naturally. Ingredients Method Notes

Ingredients
  

Maple Dijoin Dressing
  • ¼ cup apple cider vinegar
  • ½ cup extra virgin olive oil
  • 1 tbsp dijon mustard
  • 2 tbsp pure maple syrup (leave out if Whole30)
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp pepper
Sheet Pan
  • 1 medium sweet potato
  • 2 cups brussels sprouts
  • 4 thinly sliced chicken breasts
  • 2 tbsp olive oil or avocado oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • salt & pepper, to taste
Bowl Toppings (You Choose!)
  • shredded kale
  • shredded carrots
  • sliced or cubed apples
  • slivered almonds or crushed walnuts
  • pomegranate seeds
  • goat cheese (leave out if Whole30)
  • cooked wild rice (leave out if Whole30)
  • hard boiled egg

Method
 

  1. If using wild rice, prepare first (since it will take the longest) by following instrustions on the bag.
  2. Preheat your oven to 425°.
  3. Prep brussels sprouts and sweet potato. Cut off the bottom of the sprouts then cut in half and cube the sweet potato. Place them into a large bowl and toss with olive oil/avocado oil and seasonings.
  4. Place chicken, brussels sprouts and sweet potatoes on a parchment lined baking sheet ensuring they are not overlapping. Bake for 25-30 minutes or until chicken is cooked through.
  5. While cooking, prepare your hard boiled eggs, shake up your dressing (I made mine easily is a mason jar with a lid, or you can whisk them together in a container) and prep other toppings.
  6. To hard boil your eggs, place eggs in a pan with just enough water to cover them then bring to a boil on the stove.
  7. Cook eggs for 15 minutes, then drain and transfer each egg to a bowl full of cold water and ice for 5 minutes. This helps make them easier to peel!
  8. Once all of your ingredients are cooked, prepped and ready, assemble your bowl with the toppings of your liking.

Notes

Store each food group separately to keep them fresh for meal prepping.
