Cheesy, flavorful and cozy, these Pizza Spaghetti Squash Boats are the perfect dinner for the family, for date night, or even just yourself! It’s a healthy and easy dinner that can easily fit into your routine any day of the week.

Let’s get one thing straight. This is not me saying that you should not eat pizza and that bread/carbs need to be replaced with spaghetti squash. I genuinely believe life is all about balance and that if you enjoy pizza, it should be able to be incorporated into your life however you see fit. I definitely incorporate it into mine! However, this IS me saying that if you like pizza and you like spaghetti squash, then you should absolutely add this recipe to your meal list.

This is one of those easy to prepare recipes that is actually fun to make. It would be a great choice to make with kids, family, date night or girls night. It’s also a versatile recipe and can be adjusted to meet most dietary restrictions and preferences.

Make it Your Own

For my Pizza Spaghetti Squash Boats, I choose to use mozzarella that is made from goat milk, as it is easier to digest, which I get from Trader Joe’s. If dairy isn’t an issue for you, use whatever cheese you please!

This is also a great vegetarian recipe if you skip the pepperoni, but if you’re looking to add more meat, feel free to add some cooked ground beef to the sauce (as mentioned in the recipe notes). It’s also versatile as you are free to add any additional veggies to the sauce or toppings of choice to the top. The choice is yours and I can’t wait to hear what you choose!

How do you cook spaghetti squash?

It’s actually very simple! First preheat your oven to 425 degrees and slice the spaghetti squash in half, from the top to the bottom. Next, take cake pan(s) (I use two circular pans, but any cake pans will work) and place each squash in them, face down. Now you’ll fill the bottom of the pan with just enough water to cover the bottom of the pan and have a small pool for the squash to sit in. Once the oven is preheated, cook the spaghetti squash for 25-30 minutes. How simple is that?!

This method gives me perfect spaghetti squash “noodles” every time. Once it’s cooked and cooled, all you do is use a fork to form the noodles. It’s actually pretty fun and especially easy.

Pizza Spaghetti Squash Boats

Ingredients Method Notes

Ingredients
  

  • 1 small spaghetti squash
  • 4 cloves garlic, minced
  • 1 tbsp avocado oil
  • ¼ cup spinach, chopped
  • ¼ onion, diced
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese, grated
  • pepperoni
  • fresh basil, for garnish

Method
 

  1. Preheat your oven to 425°.
  2. Slice your spaghetti squash in half and scoop out the seeds. Place both halves face down in a cake pan with water covering the bottom and bake for 25-30 minutes.
  3. Once cooked, remove from the oven to cool. Once the spaghetti squash is cool, scrape out the “noodles” with a fork. Be sure not to scrape too much of the edges off as you'll want a sturdy boarder to keep it's shape.
  4. In a skillet, heat the marinara sauce, spinach, garlic and onion in avocado oil for a few minutes. Once warm, spoon on top of the “noodles.”
  5. Top with cheese and pepperoni.
  6. Return to the oven for 10 minutes. Once cooked, broil for 2-5 minutes if you'd like to brown the cheese slightly. Be sure to watch it as it can burn quickly!
  7. Once the cheese has slightly browned, remove from the oven and serve with fresh basil and a sprinkle of salt and pepper.

Notes

For leftovers, simply scrape the contents out of the spaghetti squash and place in tupperware in the refrigerator. To reheat, pop it in the microwave for 30-45 seconds.
If you’d like to add extra protein, feel free to add in a 1/2 lb of cooked ground meat to your marinara.

    So good and so easy!! Was the best, easy, tasty dinner. It truly tastes like you’re eating something unhealthy but it is so good for you!! Your cravings but guilt free!!! Will be a recipe on repeat!

    I’d never tried making spaghetti squash before, but this recipe was a hit!! Love an opportunity to squeeze more veggies in but feel like I’m eating pasta 🙂
