This Overdressed Greens Salad with Sweet Onion Dressing is easy to make but possibly the best salad I’ve ever had. The dressing is creamy and flavorful and coats all of the crispy, refreshing greens while being surrounded by fresh herbs, crunchy breadcrumbs, handfuls of shredded cheese and juicy heirloom tomato wedges. This is a salad for JOY.
It’s inspired by the salad at the Cleveland restaurant Cordelia that I haven’t stopped thinking about since I tried it.

- Note that this is really a salad that you measure with your heart! Feel free to adjust measurements of the salad components based on your preferences.
- Also note to assemble the salad right before serving to keep the greens crisp and ingredients fresh.
- Toast breadcrumbs for a few minutes on the stove with a drizzle of avocado oil. Toss until golden and crunchy.
- Add lettuce to a large bowl and pour on as much dressing as you'd like to use. Toss to completely and evenly cover each piece of lettuce.
